Simple & easy crisp biscotti’s are perfect for a memorable tea time experience. These chocolate & hazelnut biscotti’s are delicious and so crisp. With a perfect blend of chocolate & nutty flavors this recipe is a good snacking option. 

Lets talk INGREDIENTS 

Hazelnuts : Biscotti’s are loaded with nuts. This time we’ve used hazelnuts. They compliment chocolate so well. I always roast my hazelnuts before adding then to the dough. This brings out the flavor of the nuts. Roast the nuts of medium heat in a pan for 20 mins. You can even toast them in the oven at 180 degrees C for 10-15 mins. 

Chocolate & Cocoa Powder : Yes.. Unlike a lot of chocolate biscotti recipes we going to be using chopped chocolate and not just cocoa powder. The type of chocolate & cocoa powder you add definitely influences how these biscotti’s turn out. I’ve used dark chocolate & unsweetened cocoa powder for this recipe. Stick on to these 2 to get that extra chocolate flavor in your biscotti’s

Brown Sugar : I like to use brown sugar for this particular recipe. The texture & flavor is simply different. In case you do not get brown sugar easily you can substitute it with white sugar. 

 

Baking

Biscotti’s need to be baked really well to get that crispy texture. So after baking the log shaped biscotti we cut them into pieces and bake each side of the piece for 15 mins each. In case you like it not so firm you can reduce the baking process of each side of the piece to 8-10 mins. These biscotti’s wont’t be as firm as they normally are. 

 

Here’s the recipe to making these chocolate hazelnut biscotti’s,

Ingredients
  1. 120 grams hazelnuts, chopped
  2. 120 grams brown sugar
  3. 70 grams dark chocolate, chopped
  4. 130 grams flour
  5. 10 grams cocoa powder
  6. 1/2 teaspoon baking soda
  7. 2 teaspoon coffee powder
  8. 1/4 teaspoon salt
  9. 2 small eggs
  10. 1/2 teaspoon vanilla essence
  11. 1/4 cup flour (for dusting & kneading purpose)
Instructions
  1. Toast the chopped hazelnuts and set aside
  2. Combine the brown sugar & chopped dark chocolate and grind until fine
  3. In a bowl, combine the flour, cocoa powder, baking soda, coffee powder and salt. Mix well and set aside.
  4. In another bowl, combine the eggs & vanilla essence. Using a beater, beat well.
  5. To this mixture, add the brown sugar & chocolate mixture. Mix well
  6. Continue by adding the flour mixture, do not use the beater while doing this.
  7. Once all of the ingredients are combined add the toasted hazelnuts.
  8. On a floured surface, roll the dough into a log shape. During this process the dough may seem sticky add some of the flour from the 1/4th cup that was kept for dusting purpose.
  9. Place this log shaped dough onto a butter paper and bake in a preheated oven at 150 degrees C for 30-40 mins. The top of the biscotti should feel firm
  10. Remove from the oven and cut into pieces. Place these pieces onto the same butter paper and bake for 15 mins at 150 degrees C. Once baked on one side, turn the pieces and bake for another 15 mins on the other side. Remove from the oven and cool for 10 mins
  11. Make sure you store these in an airtight container once ready.
Notes
  1. These biscotti's stay well for 2-3 weeks
  2. You can even dip these biscotti's in some melted chocolate of your choice. I like them with some milk chocolate

Bombay Bundt Bread

This bread recipe is inspired by the traditional plain bread we get at bakeries in Bombay. I’m so used to having bakery bread regularly for dinner, its been a regular routine. Bakery bread in Bombay also known as Laadi pav is super soft and fluffy. Here’s my recipe to making this bakery bread even tasty. 

 

Lets talk INGREDIENTS

Milk : Normally bread in regular bakeries in Bombay is prepared by kneading it with water, however I like to use milk & milk powder. This makes the bread so tasty that you can even enjoy it all by itself. So no jam , no butter, no cheese just bread still so YUMMY

Yeast : One of the most important ingredient in bread making is YEAST. Yeast causes the process of fermentation. It produces carbon dioxide which makes the bread rise. You can feel free to use dry yeast or fresh yeast, whatever is easily available. In my recipe I have used fresh yeast. To activate the yeast, I put 2 tablespoons of fresh yeast in a tablespoon of warm water with a teaspoons of granulated sugar. Let this mixture rest for 5 mins before using it. Do the same if using dry yeast

 

Kneading the bread dough is very important. Once all the ingredients are combined you need to make sure you knead the dough well. It should form a smooth and soft ball. Check out the video given below to knead the dough well.

 Baking

It is very very essential in bread making. Your recipe may seem to be excellent however if you go wrong with the baking you may get an uneven hard loaf with no fluffiness. To avoid this, follow these steps while baking

Step 1 : Preheat your oven for 5 -7 minutes at 200 degrees C with the top & bottom oven coils switched on. (Baking mode) 

Step 2 : After placing the dough in the baking pan, cover the pan with foil and place in the preheated oven at 200 degrees for 10 mins 

Step 3 : Remove the foil and continue baking for 15-20 minutes at 170 degrees C with the top coil switched off 

Once baked remove from oven

Ingredients
  1. 2 cups flour
  2. 1 teaspoon salt
  3. 1 tablespoon sugar
  4. 3/4 cup warm milk
  5. 1/4 cup fresh cream
  6. 7 tablespoons milk powder
  7. 2 tablespoon canola oil
Yeast mixture
  1. 2 tablespoons yeast
  2. 1 tablespoon warm water
  3. 1 teaspoon sugar
Milk & Butter mixture for the golden crust
  1. 1 tablespoon milk
  2. 2 tablespoons salted butter
Instructions
  1. In a small bowl, put the yeast with one tablespoon warm water and one teaspoon sugar. Let rest for 5 mins (yeast mixture)
  2. In a big bowl, put the flour,salt, sugar and milk powder. Mix well
  3. Make a well in the center of the dry ingredients. Add the warm milk, fresh cream, one tablespoon of canola oil and the yeast mixture. Mix well
  4. Bring the mixture onto a flat surface and knead well for 5-7 mins
  5. Add the remaining tablespoon of oil and knead well (3-4 mins) until the dough is soft and smooth
  6. Cling wrap the dough and keep in a warm place for about an hour. The dough should double in size. Punch the dough and knead for about a minute. Form round balls and place in a greased bundt pan. Make sure the pan is well greased with butter or oil
  7. Keep this in a warm place and let it rise again. Once double in size make a mixture of butter & warm milk and apply onto the dough using a brush. This gives the bread a golden brown crust
  8. Cover the bundt baking dish with foil and bake in a preheated oven for 25 to 30 mins ( look up for details on perfect baking - Important)
  9. Once baked, brush on some butter and serve.
