First of all, the only reason I decided to bake banana muffins is that I had some bananas that were ripe due to which, I knew they were perfect for some baking. Moreover, I had this banana nut muffin recipe in my recipe diary and thought it would be perfect to share it with you guys.
Above all, it’s a flavorful muffin with the right amount of ripe sweetness from the bananas. Moreover, walnuts and bananas make a great combination and these muffins are proof. Thus, in this recipe, roasted walnuts add a crunch and compliment these muffins in every way. So, I like to call them breakfast muffins since its made of fruit, nuts, and spices. Moreover, it is good to start your day with muffins like these.

How To Make Easy Banana Nut Muffins
LETS TALK INGREDIENTS – Banana Nut Crunch Muffins
EGG REPLACEMENT
First of all, I’m not someone who would substitute eggs for this recipe, however, just in case some of you’ll are curious to do so here’s what you can do
You can use egg replacement powder.
Measurement: 1 egg = ½ tablespoon egg replacement powder + 2 tablespoons of water
Mix the water and powder together and add to the batter just like you would add the eggs
BANANA
Banana is the star ingredient in this muffin recipe. For instance, the strong banana flavor in this muffin is what makes it different from the others. To get the best flavor make sure to use ripe bananas and not the regular ones. Ripe bananas are mushy and have the right amount of sweetness that we need. If you have regular bananas that are not ripe just bake the whole banana in the oven for 10-15 mins on 160 degrees C, as a result, this will ripen the bananas and make them mushy, now their good to use
WALNUTS
Next, toast the walnuts in the oven or on the gas to bring out the real flavor from them. Toasted walnuts are more crunchy. Walnuts are added in the batter as well as a big bunch of them on the top of each muffin, these add a crunch in every bite. Secondly, do not chop the walnuts fine, keep them chunky
SPICES
This recipe contains a dash of spices like cinnamon, cardamom, and nutmeg powder. Similarly, when you bite into these muffins, you’ll know why we added these spices. It makes them intense with a milk aroma. However, if you are not comfortable with adding any of these spices, feel free to skip it.

Homemade Banana & Walnut Muffins Recipe
Ingredients
¼ cup milk
3 medium-sized ripe bananas
1 cup Walnuts, toasted and roughly chopped
½ cup white powdered sugar
¼ cup brown powdered sugar
1 egg
A stick of unsalted butter, 115 grams
1 ½ cup all-purpose flour
1 ½ teaspoon baking soda
½ teaspoon mixed spices (cardamom powder, nutmeg powder and cinnamon powder)
Instructions
First of all, in a bowl combine the flour, baking soda, and mixed spices. Mix well. Add ¼ cup walnuts to it.
In another bowl, beat the butter and sugars together. Add the egg and continue beating. Mash the banana and add to the mixture. Mix well.
Next, to this mixture, add the milk and beat.
Now, fold in the flour mixture making sure there are no lumps in the batter.
Pour this batter into muffin liners (fill up to ¾ of the liner). Top up the muffin with the remaining ¾ cup of walnuts
In conclusion, bake at 180 degrees C for 15 to 20 mins or until an inserted skewer comes out dry

I have always loved the banana and nut combination. There used to be some bagels at a local shop that made them. I always have ripe bananas…or frozen ones. I think I need to make some of these. The grandkids would love them for breakfast.
