Brownie Lava Cake

I made this for my mom’s birthday last year and it was a big hit. The fun part is when you cut into this gorgeous brownie cake. No one imagined the chocolate sauce to ooze out so beautifully. It works !! And simply tastes as good as it looks

Wanted to share this recipe with you guys but never made time to put it up. Finally !! I attempted making one again and it turned out fab as always.

It’s an easy peasy recipe. All you need to do is bake a brownie, make some chocolate ganache. Fill the chocolate ganache in the center of the brownie and top it up with cocoa powder to cover the secret. Cut into it and see MAGIC !!

How To Make a Chocolate Brownie Molten Lava Cake?

It’s made up of 3 parts – Brownie Cake, Chocolate Ganache and Cocoa powder

Chocolate Brownie Cake

Firstly, get started with baking a round or bundt chocolate brownie. The recipe that’s shared out here is rich, gooey and decadent. Just like how a brownie should be. Once the brownie is baked, make a hole in the center of the brownie. This is where the chocolate sauce is going to sit.

Tip: Use a cookie cutter to make a neat hole in the center of the brownie

Chocolate Ganache

Chocolate Ganache is the sauce that oozes out from the brownie cake giving it a molten lava look. Ganache is made out of 2 ingredients. Cream & chocolate. All you need to do is heat up the cream and melt the chocolate in it. Fill up the hole with this rich chocolate ganache and cover the cake all around with it

Tip: You can flavor the chocolate ganache as per choice. I like to add coffee powder sometimes or maybe some rum if your in a mood for it

Cocoa powder

Dusting cocoa powder over the cake is essential. It covers all the secrets under it. You do not want anyone to know you made a hole in the cake and all that drama. Thus, the cocoa powder covers it all and makes it looks even gorgeous.

Tip: Dust the cocoa powder just before cutting the cake as the cocoa powder may sink into the wet chocolate ganache and may lose the effect you looking for

Brownie Lava Cake Recipe

Ingredients

For the cake:

  • salted butter 180 grams
  • dark chocolate, chopped 180 grams
  • 3 large eggs
  • castor sugar 240 grams
  • self-raising flour 65 grams
  • unsweetened cocoa powder 50 grams

For the Ganache:

  • dark chocolate 300 grams
  • cooking cream 300 ml

Final step:

  • Cocoa powder 20 grams (for dusting)

Method – Brownie Lava Cake

For the cake, in a microwave-safe bowl, combine the butter & chocolate together until melted. You can even do this on a double boiler. Once completely melted, set aside

Next, add the self-raising flour & cocoa powder in a bowl. Mix well and set aside

In another bowl, beat the sugar and eggs together on high speed until light and fluffy. The mixture will be double its volume, this takes about 3 to 4 mins. Add the chocolate & butter mixture into this and beat well

Fold in the self-raising flour & cocoa powder mixture as well. Mix well making sure there are no lumps

Line a 6-inch tin with parchment paper and pour the brownie cake mixture in it. Bake this in a preheated oven at 180 degrees C for 40 to 50 mins. When you insert a skewer there should be a few crumbs on it, not completely clean as the brownie should be fudgy and gooey

Let it cool for a few minutes. Next, remove it from the baking tin and using a round 2 to 3-inch cookie cutter make a hole in the center

For the ganache:

Heat up the cream in the microwave or double boiler. Add the chocolate to it and let it melt completely. Mix the cream and chocolate well making sure the chocolate is melted completely. If there are any chocolate lumps, heat the mixture to melt it.

To make the chocolate lava cake, pour the chocolate ganache in the center of the brownie cake. Let the chocolate ganache flow all around. Dust sufficient cocoa powder onto it. Cut immediately to see the chocolate ganache flow out of the center of the brownie cake

    1. You may try using flax eggs instead of a normal egg
      1 flax egg = 1 tbsp flaxseed powder + 3 tbsps warm water. Combine and set aside for 5 mins. Add into the batter instead of eggs
      This is perfect to make an eggless version

    1. I made this today as a birthday dessert for my cousin and may I just say WOW!! As delicious and rich as it looks!! I realized however that it doesn’t say what temperature to bake at, so I did 350 degrees. Additionally, I managed to convert the recipe from grams so I was proud of myself. I only had a 9″ springform pan, so 37 minutes at 350 was perfect! Seriously y’all, this was totally worth making! =)
