My coffee bean cookie recipe is actually a sugar cookie recipe that is tweaked using cocoa powder and coffee. Thus, you may follow the same or perhaps similar tips & tricks for other cookie recipes as well
How to make coffee cookie dough
Making the right consistency cookie dough is a must. Basic rules to do so are as follows
Beat the butter, sugar & eggs
This is normally the initial step in many baking recipes and perhaps one of the most important steps as well. Make sure to beat the two ingredients well (butter and sugar) until light and fluffy. The sugar should dissolve in the butter and form a creamy consistency. Add the egg and continue whisking until the mixture feels smooth
Use room temperature butter (not melted or cold butter, just soft room temperature butter is good) Using melted butter may yield flat cookies, using cold butter may yield a dry cookie dough. Thus, follow the tips
Icing sugar is what we’ve used in this recipe. Why icing sugar? It contains a bit of cornflour. The cornflour in the sugar makes sure that the cookie dough doesn’t spread after baking. It keeps the cookie in good shape. You may come across cornflour in many no spread cookie recipes
Fold in the flour (Coffee Cookies recipe)
You must avoid the electric beater while doing this step. You want to combine the flour with the wet ingredients making sure you do not overmix, it will lead to a sticky mixture. It’s best to use a silicone spatula to fold the flour
For a no spread cookie the dough needs to be less sticky. It should form a smooth ball after all the ingredients are combined
Chill the cookie dough
This is the secret to prevent excess spreading. Chilling the cookie dough sets the butter in it (solidifies the fat in the cookies) Thus, the fat in the chilled cookie dough takes longer to melt than the fat in room temperature cookie dough. The longer the butter remains solid the less the cookies spread

Temperature to bake coffee cookies
These cookies are to be baked at 160 degrees C for 10 to 15 mins. You will notice they double in size once baked so keep an inch gap between every cookie placed on the parchment paper
If you like the cookies chewy, 10 minutes of baking is perfect. If you’d like it crisp, 12 to 15 minutes is good. I leave it to you …

Well !! These are coffee bean cookies so we shape them keeping in mind the beans
All you need to do is take a small amount of cookie dough and roll it onto your palms until smooth with no cracks in an oval shape. Do not flatten the top with your palms. Next, using a knife create an impression on the diameter of each cookie to make it look like a coffee bean

Ingredients
- 130 grams All purpose flour
- 12 grams Cocoa powder
- 45 grams Cornstarch / cornflour
- 5 grams Instant coffee powder
- 10 ml Hot water
- 75 grams unsalted butter
- 70 grams icing sugar
- 1 egg yolk
- ½ teaspoon Vanilla Essence
Instructions
- Combine the hot water and coffee together. Mix well and set aside
- In another bowl, combine the flour, cocoa powder and corn starch. Mix well and set aside
- Next, take a bigger bowl, add the butter, sugar and vanilla essence. Whisk until smooth. Add the egg yolk and continue whisking. Add the coffee mixture to it and whisk
- Now, fold in the flour mixture. It should form a smooth dough. If not, you may have to add in a few more tablespoons of flour (only if needed) Cling wrap the bowl and refrigerate for 30 mins
- Once chilled, take small portions of the dough and form coffee bean-like shapes just like demonstrated in the video. Place the cookies on a baking tray lined with parchment paper and freeze for 5 mins
- Lastly, bake the cookies in a preheated oven at 160 degrees C for 10 to 15 mins

Hi Niyati .. The cornflour in the icing sugar helps to absorb the extra moisture in the cookie, that makes sure the cookies stays in shape after baking. Make your own icing sugar home by grinding sugar & corn flour in the mixer and then use it
