Hi guys… I’ve been in a chocolaty mood throughout the week and therefore, have been working on getting to you some real chocolate overload recipes. Say hello to the first recipe, double chocolate chip cookies that I discovered this week. It’s the Double Chocolate Cookies which I’ve fallen in love with. I made a big batch of these cookies and have nothing left for me to munch on. So, I decided to let this be the first recipe for the week as its super easy and hassle-free. 

Firstly, I have a little diary of recipes that I love the most. This diary also has a few recipes which were given to me by friends and family, these recipes are so special and I’m going to post them on this blog one at a time to make you fall in love with me again and again. One of the recipes from that little diary is this one.

ABOUT THIS RECIPE – The Best Bakery Style Double Chocolate Chip Cookies 

Being a chocolate lover I’m always on a run for good recipes. Most of the times I adjust recipes or create them according to my liking. This recipe is loaded with chocolate chips and cocoa powder and that’s why we call it Quick and Easy Double Chocolate Cookies. At one point I even thought of calling these cookies Overloaded Chocolate Cookies but then we settled at DOUBLE. You could even call it the Ultimate Chocolate Chocolate Chip Cookies

These chocolate chunk cookies are easy to make, quick and taste great. They are not too crisp and not chewy. It’s just a good blend of chocolate chunkiness with a lightly crisp texture on the outside and a semi-soft texture on the inside. I promise they are rich in chocolate with chocolate chips in every bite.

Let’s Talk Ingredients 

Butter: Firstly, butter is so essential in this easy chocolate cookies recipe. However, the butter consistency is what is more essential.

We do not want flat cookies but chunky fuller looking cookies. The butter needs to be at room temperature and not really soft or melted. We do not want super hard butter from the fridge. All we looking for is room temperature butter. To get this right, I remove my butter from the fridge and keep it out at room temperature for 20-30 mins. This lets the butter become soft and does not melt.

Also, I like using salted butter but just in case you plan to use unsalted butter please add a pinch of salt to it while you mix all the ingredients together.

Chocolate Chips: Its the chocolate chips that make these cocoa cookies fancy so be generous while adding these. I’ve used dark chocolate chips for this one, sometimes I even use a combination of white & dark chocolate chips to make it look fancier. You decide how you’d like these to be.

Cocoa Powder: Next, this recipe contains dutch processed unsweetened cocoa powder however you can even use natural cocoa powder. Similarly, I like using the dutch processed cocoa powder as it gives these cookies a lovely dark color and rich taste. Also, it’s easily available so I’d recommend you use the dutch processed unsweetened cocoa powder.

Double Chocolate Cookies

Ingredients

1/2 cup salted butter, room temperature

1 tablespoon instant coffee powder

3/4 cup castor sugar

1 egg

1/4 cup cocoa powder

chocolate chips 1 cup

1 1/3 cup all-purpose flour

1/4 teaspoon baking soda

Instructions

  • In a large bowl using an electric beater, beat the sugar and butter together until light and fluffy.
  • Add the egg and instant coffee powder to the mixture and beat for 20-30 secs just until well incorporated. Don’t over-mix at this stage.
  • In another bowl, combine the flour, cocoa powder, and baking soda. Mix well and combine it with the wet ingredients using a spatula. Make sure you do not use the beater at this stage. You want to combine the flour mixture along with the wet ingredients using a spatula.
  • The mixture should not be sticky, you should be able to roll a piece of the dough into a ball using your palms.
  • Add the chocolate chips to this mixture and mix well.
Baking of the cookies
  • Line a baking tray with parchment paper and place tiny balls of the cookie dough onto the parchment paper. Make sure to place each cookie at a distance from the other as the cookies spread a bit while baking.
  • Bake the cookies at 160 degrees for 10-12 mins. Once done let cool on a wire rack out of the oven for 10 mins. This will let them firm up on the outside still being soft on the inside.

Notes

  • If you feel the dough is too sticky and you’re unable to form cookie dough balls using your palms please add some more all-purpose flour to the dough using a spatula and not an electric beater
  • In conclusion, I also like to use a few chocolate chips to strategically place them over the cookies before baking. This makes the cookies appear as their loaded with goodness (of course, good being the chocolate chips)
