How to make mango cheesecake without baking?
So, this May season I had my mother get us mangoes too often. Therefore, it got me so tempted to keep making mango based recipes. You’ve definitely come across a couple of mango based recipes on my blog for the past few weeks.
I then realized that I have been creating a lot of mango recipes but yet not shared my favorite mango cheesecake recipe with all of you. It’s a no-bake cheesecake which is quick and easy to make. Also, these jars are a perfect gifting option and look so fancy. Jar stuff is quite in these days so cheesecakes served in jars is something I had to create.

LET’S TALK INGREDIENTS – No Bake Mango Cheesecake
Cream Cheese
Firstly, it is essential to use cream cheese while making this one. You may come across a lot of recipes which use cottage cheese or even regular cheese and this may tempt you to do so. But let me be honest, nothing can beat cream cheese while making a cheesecake. It is the utmost important ingredient while making any cheesecake. Make sure the cheesecake is at room temperature while its being blended with other ingredients
White Chocolate
In my recipe, I don’t use gelatin or agar-agar or even egg as the binding agent. So, white chocolate is what binds this cheesecake together. Also, makes it creamy and delicious. However, while adding the melted white chocolate make sure it is not hot.

The Best Mango Cheesecake Recipe
Lemon Juice
It cuts down on the sweetness and gives it a good balance of flavors. Also, lemon and cheese make a good combo just like the Mango Lime Cheesecake. You can add less or more lemon juice according to how you would like the cheesecake. Do not go overboard with adding the lemon juice as the sourness may be considered as spoilt by some people
Mango Chunks
Yes !! The cheesecake contains mango puree as well as chunks. I like to put the biscuit base at the bottom of the jar and the cheesecake filling all around with mango pieces added in the center of the jar right from the bottom to the top. This makes sure you have mango chunks in every bite and also adds to some more surprise as you cannot see it through the jar.

Mango Cheesecake Jars Recipe
Ingredients
For the Biscuit Base:
1oo grams digestive biscuits
40 grams butter, melted
For the cheesecake filling:
150 grams cream cheese, room temperature
85 ml whipping cream, full fat
160 ml mango puree
140 grams melted white chocolate
¾ tablespoon lemon juice
2 cups mango chunks
mint leaves, for garnishing
few drops of orange edible color (optional)
Instructions (Mango Cheesecake Jars)
- Put the biscuits in a zip lock bag and crush the biscuits by rolling a rolling pin over it. Remove the crushed biscuits into a bowl and mix it with melted butter
- Put this biscuit mixture at the base of every jar. Press with a spoon while adding the crushed biscuits to the bottom of the jars. Refrigerate for 10 mins
- In another bowl, beat the cream cheese until light and fluffy. Add the whipping cream to this mixture and continue beating until the whipping cream becomes fluffy. Add the mango puree and beat well until the ingredients are well combined
- Now, add the melted white chocolate to the mixture, beat well. Mix in the lemon juice and add color if required
- Put this in a piping bag and pipe this mixture all around the sides of the jar making a well in the center. Keep adding the mango pieces in the center of the jars and the cream cheese mixture on the sides of the jar
- Once filled, tap the jars to remove any extra air bubbles. Top the jar with some more mango pieces and some mint. Refrigerate for 2 hours and then consume
