Eggless Buns Recipe (Nutella Buns)

Yes !! That’s right… These buns have no egg yet turn out soft and fluffy. To do so we use something called water roux or a homemade bread starter. This helps to absorb double the moisture which leads to soft and fluffy buns

What is water roux (Homemade bread starter) for Nutella Buns

Water roux is a mixture made of flour and water (you can even use milk instead of water) Cook the mixture on the gas till all the water is absorbed. Cool this mixture and combine with the other ingredients

The concept behind this is cooking the flour, as it absorbs double the amount of water as compared to uncooked flour. This leads to soft and fluffy buns although it contains no egg

How to make bread using starter?

First of all, heat up some water on the gas and whisk in the flour. Cooking this flour mixture will make it thick. Cool this mixture. This is the starter that needs to be used to combine with other ingredients

Next, we need to hydrate the active yeast before adding the other ingredients. Thus, add some warm water in a bowl, add the active dry yeast and sugar. Mix it and let the mixture sit untouched for 5 to 10 mins. The mixture will turn frothy, it’s now ready to use

Combine all the above ingredients along with more flour and oil. Knead well for about 10 minutes until the dough forms a smooth ball

Let this rest for 2 hours, it will double in size. Punch it back and form the buns as required. Proof for another 30 mins and bake until golden brown

Nutella (Nutella Buns)

Nutella is delicious but quite loose in texture. Thus, before stuffing them in the buns I recommend you chill Nutella in the fridge for about an hour. It gets thicker, making it easier to work with.

Put a big dollop of Nutella in the buns as once the buns are baked they double in size. It shouldn’t feel like, less of Nutella and more of bread

Once you fill the Nutella, make sure to seal the bun well. You do not want Nutella to spill out and spoil the look of these buns

Nutella Buns Recipe

Ingredients

For the slurry (starter):

  • flour 40 grams
  • water 115 ml

For the Dough:

  • warm water 120 ml
  • sugar 50 grams
  • active dry yeast 2 tsp
  • milk powder 40 grams
  • all purpose flour 250 grams
  • oil – 45 ml

For the filling:

  • Nutella – 250 grams

For the glaze:

  • warm milk – 1 tbsp
  • melted butter – 2 tbsps
  • sesame seeds, for sprinkling

Method to make Nutella Sweet Buns

In a pan on medium heat, add the water (115 ml). Then, add the flour (40 grams) and mix well until thick. Switch off the gas and let it come to room temperature. This is the slurry (starter)

Next, in a bowl, combine the warm water along with the sugar and active dry yeast. Mix well and let it sit for 5 to 10 mins. It will turn frothy

To this frothy mixture, add the milk powder and prepared slurry (thickened flour & water mixture). Whisk well making sure there are no lumps

Add the flour to the mixture and mix well. At this stage, the dough will feel dry.

Next, add the oil a little at a time and knead well. Knead for 10 minutes making sure all the oil is added to the dough. The dough should feel smooth at this stage. Make a smooth dough ball and let it rest for 2 hours in a bowl greased with oil

After 2 hours, the dough will be double in size. Punch the dough back. Divide the dough into balls weighing 45 to 50 grams each. Dust some flour onto the surface and using your fingers flatten the dough

Add a big dollop of Nutella in the center of the dough and join all the edges, making sure you seal it well. Make a smooth ball and place the Nutella buns on a baking tray lined with parchment paper

Let it prove for 20 to 30 mins before baking. Brush the buns with the butter and milk mixture and sprinkle sesame seeds over it. Once ready, bake the buns in a preheated oven at 180 degrees C for 20 to 25 mins or until golden brown

How to use active dry yeast?

You first need to hydrate active dry yeast. No adding it directly to make the dough. Therefore, to hydrate it you need to mix active dry yeast with warm water along with sugar. Let this sit untouched for 5 to 10 mins. You will notice the mixture turns frothy. Its now good to use

  1. I haven’t tried this yet, but your Bombay bread is the best recipe for soft, fluffy bread that I have found so far, and I have tried MANY. And it’s so versatile! I can add some garlic, herbs, and grated cheese, or layer it with dough then cheese then dough again. My family loves it. I usually stay away from carbs and even I have to have a piece.
