Easy techniques for making a beautiful buttery cookie with neat swirls and a crisp texture

Most of us are familiar with the basic chocolate pinwheel cookies recipe, but my homemade pinwheel cookies are a bit different. These cookies are made keeping in mind beautiful red and white swirls
Above all, the reason I attempted the making of these Pinwheel cookies is because of how beautiful it looks. In addition, the combination of red & white swirls takes it to the next level. I thought, making these pinwheel cookies into heart-shaped ones would be perfect for Valentine’s Day and keeping them round would be perfect for Christmas. Wow !! So now you have a some great Christmas baking ideas
However, to give it its shape, I never used any heart-shaped cutters but just shaped them by hand. (Check it out in the video given)

SECRETS TO THE BEST COOKIE TEXTURE
CHILLED DOUGH
It’s best to work with chilled cookie dough. Therefore, at every step, whether rolling the dough into sheets or cutting the cookie shapes, always chill the dough, as a result, it makes it easier to work and it also yields neater cookies
ROLLING THE DOUGH
In addition, the best way to roll the dough is by sandwiching the dough between 2 parchment paper sheets like shown in the video below. As a result, this does not make the surface or dough sticky
However, if you find that the dough is getting too soft and it is difficult to work with, let it refrigerate for another ½ hour. As a result, the butter in the dough will harden making the dough firm and easier to roll

HOW TO MAKE PINWHEEL COOKIES
Recipe – Pinwheel Swirl Cookies OR Xmas Cookies
Ingredients
- Salted butter 250 grams
- Castor Sugar 130 grams
- Eggs 2
- Vanilla Essence 1 teaspoon
- All-purpose flour 400 grams
- Red gel food coloring 2 to 4 drops
Method
- In a bowl, beat the butter and sugar together until light and fluffy
- Add the eggs and vanilla essence to the mixture and continue beating. Mix in the flour as well.
- Divide the mixture into equal parts. Keep one as it is and let’s call this the WHITE DOUGH. Add the red food coloring to the other part of the mixture and mix well. Let’s call this the RED DOUGH
- Wrap both the cookie doughs (Red & white) with cling wrap and let it sit in the fridge for an hour. As a result, this will set the butter in the dough, therefore, making it easier to roll
ROLLING THE DOUGH
- Remove each part of the dough from the fridge. Starting with the white, take a sheet of parchment paper and dust with flour, place the white dough onto the parchment paper and sprinkle some flour over it as well. Next, place another sheet of parchment paper over the dough and using a rolling pin, roll the dough. Once rolled, cut the edges making a nice rectangular shaped rolled dough. Let this chill in the fridge as you repeat the same process with the red dough
- Once done place both, the red and the white dough over each other and gently roll the rolling pin over it to make sure both stick to each other (no need to add any sticking agents like water) Above all, do not overdo this step, you do not want the colors to mix with each other
- Carefully, roll the dough tightly into a log. Wrap the log in cling wrap and refrigerate for 20 mins. As a result, it will make it easier to slice the cookies
- In addition, follow the steps in the video given below to form a heart-shaped cookie. Cut pieces of the rolled dough. In conclusion, bake at 160 degrees C for 15 to 20 mins or until the base of each cookie is golden brown
