How To Make Sesame Hamburger Buns / Burger Buns
DOUGH
While making the dough you will notice that this dough is really STICKY. Please do not panic as its meant to be sticky. As you work the dough you will notice that the dough feels less sticky and forms a super soft and slightly smooth ball.
FERMENTING
In this sesame hamburger buns recipe, fermenting the dough at various stages is what yields a good texture. Thus, once mixed we need to ferment the dough. Then, punch it back and referment it. Form small dough balls and further, ferment twice again. These steps help in getting a soft bun with a crisp texture and doing it at every stage is essential. Also, at each stage, while fermenting cover the dough or the dough balls with cling wrap

BAKING THE SESAME HAMBURGER BUNS
Note, the buns do spread while baking, make sure to maintain a distance between every bun to avoid the buns from sticking to each other. The bottom of the bun needs to be light brown once baked. Do not open the oven door for the first 15 mins, since this is when the real baking is happening.
STORING THE BUNS
Note, that they taste best when freshly made and also remain well for 2-3 days. However, if you plan on storing it longer, put it in an airtight container or bag and freeze it. Also, it can be frozen for up to 2-2.5 months. Next, thaw the buns when needed, microwave and serve.

Sesame Hamburger Buns Recipe
Ingredients
For The Dough
1 teaspoon instant yeast
30 grams granulated sugar
90 ml warm water
2 eggs
40 ml unflavored oil
1 teaspoon salt
430 grams all-purpose flour
90 ml milk
For Brushing On To The Buns
1 tablespoon melted butter
1 tablespoon milk
3-4 tablespoons sesame seeds
Instructions For Fluffy Hamburger Buns
Firstly, in a bowl add the yeast, granulated sugar, warm water, oil, eggs, milk, salt and ¼th of the all-purpose flour. Mix all of these ingredients using a spatula. Add the remaining flour to the mixture and mix using a spatula
Knead this mixture to make sesame hamburger buns
Then, in a processor or do it by hand. The mixture will be really sticky but continue mixing it for 8-10 mins, keep scraping the dough from the sides of the bowl using a plastic scraper and it will form a smooth not so sticky dough after a few minutes of kneading
Fermenting
Next, put this dough in a bowl brushed with oil all over. Cover with cling wrap and ferment for 1 hour. The dough will double in size. After one hour, punch the dough back and referment for another hour, it should double in size again
Once done, place the dough on a lightly oiled surface and keep punching and folding the dough for a minute. Divide this dough into equal balls of 80 grams each. Roughly roll the dough balls making sure all the cracks are at the base of the dough.
Let this sit on a piece of parchment paper for 15 mins. Make sure to cover with cling wrap during this time
Once 15 mins are completed, dust each of the dough ball with some flour and roughly press each dough ball and re-roll them into smooth balls making sure all the cracks are at the base.
Brushing The Buns – Homemade Buns Recipe / Sesame Hamburger Buns
Place these dough balls on a parchment paper keeping a gap of 3-4 inches between each bun. Carefully cover with cling wrap. Ferment them for 1 hour, remove the cling wrap and then brush a mixture of egg and milk over each dough ball.
Top each of the buns with sesame seeds and bake at 190 degrees for 25-30 mins. They should turn golden brown in color on the top and a light brown color on the base of each bun
In conclusion, Lightly brush some more butter on top of the bun once baked.

I’ve personally not made an eggless version of this bun but you may try. Just mix 2 tbsps of flaxseed powder with 6 tbsps of water. Set aside for 5 mins and use in the recipe instead of the 2 eggs
