The Big Brownie Cookie is a chocolate lovers dream come true. A crusty outside with a rich soft brownie texture on the inside. This cookie is big, rich, soft and decadent.

Ingredients

  • ½ cup 60 grams all-purpose flour
  • ½ teaspoon 2.5 grams baking powder
  • ¾ cup 140 grams brown sugar
  • 2 eggs
  • ½ teaspoon 2.5 ml/grams vanilla extract
  • 1 ⅛ cup 210 grams pure dark chocolate chunks
  • 2 tablespoons 30 grams salted butter
  • ½ cup 95 grams chunks of pure dark chocolate (roughly chopped)

Instructions

  • In a bowl, combine the all-purpose flour and baking powder together. Set aside
  • On a double boiler, melt 200 grams of the dark chocolate along with the salted butter. Remove from the heat once melted
  • In a big bowl, beat the brown sugar with the eggs on high speed until this mixture turns thick and fluffy, it should double in size. This takes about 2-3 mins. Add the vanilla essence, melted chocolate mixture and continue beating.
  • Add the flour mixture and roughly chopped pure dark chocolate chunks. Mix well making sure there are no lumps.
  • Cling wrap the bowl and let it sit in the refrigerator for an hour. Once done, scoop out huge amounts of the batter using a big ice cream scooper and place the cookie batter at a distance from each other on a cookie tray. Slightly press the top of each cookie (do not press too much, but just to smoothen the top a bit)
  • Bake these cookies in a preheated oven at 170 degrees C for 20-30 mins or until the sides of the cookie feel firm and top of the cookie has a crust formed. Cool completely once done. Enjoy !!

Recipe Notes

Once weighed, grind the brown sugar if it's too thick. If the brown sugar is super fine there is no need to grind. In India, we normally get thick brown sugar granules easily more than superfine, due to which I weigh the sugar and then grind it
