These easy Carrot Cake Energy Balls are made with carrots, almond flour, walnuts, etc and is the perfect healthy snack recipe to try

Ingredients

  • 130 grams Carrot, roughly chopped 1 big carrot, 1 cup
  • 110 grams Black seedless soft dates 1/2 cup
  • 30 grams Walnuts 1/4 cup
  • 1 tbsp coconut oil 15 ml
  • 25 grams freshly grated coconut 1/4 cup
  • ¼ tsp Spice powder (mix of cardamom & cinnamon powder)
  • Pinch of salt
  • ½ tsp vanilla essence 2.5 ml
  • 150 grams almond flour 1 1/2 cup
  • 25 grams desiccated coconut flakes for rolling 1/4 cup

Instructions

  • In a mixer grinder, combine all the ingredients besides the almond flour and desiccated coconut flakes. Grind the mixture and remove it in a bowl
  • To the carrot mixture, add the almond flour and mix to form a dough. You may add a little more almond flour if needed
  • Form balls and roll it in the coconut flakes. Serve or store for 2 days at room temperature and for 10 days in the fridge

Recipe Notes

If you like a little crunch, add the walnuts along with the almond flour while forming the dough instead of grinding it with the carrots
