Oatmeal Recipes are simply perfect for breakfast and these Healthy Oat Muffins make the best breakfast muffin recipe. We’ve tried to use healthy ingredients like coconut sugar, coconut oil, almond flour, etc and have also made sure that the muffins turn out fluffy and moist

Ingredients

  • 160 grams Oats flour
  • 60 grams Almond flour
  • 40 grams All-purpose flour
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon salt
  • 1 tablespoon Flaxseed powder
  • 3 tablespoon Warm water
  • 130 grams Coconut Sugar 
  • 1 teaspoon Vanilla Essence
  • 70 ml Coconut oil
  • ½ tablespoon White vinegar
  • 240 ml Almond milk

Instructions

  • Combine the flaxseed powder and water, mix and set aside for 5 to 10 mins
  • In a bowl, combine the oats flour, almond flour, all-purpose flour, baking powder, baking soda, and salt. Mix well and set aside
  • In another bowl, add the prepared flaxseed mixture, coconut sugar, coconut oil, vanilla essence, and white vinegar. Whisk well. Add the almond milk and continue whisking
  • Now, add the flour mixture to the wet ingredients and mix. Make sure there are no lumps
  • Pour the muffin batter in cupcake liners up to ¾ and bake at 180 degrees C for 20 to 25 mins or until an inserted skewer comes out clean

Recipe Notes

You could even drizzle a little honey over the baked muffins if you want it sweeter
