Malai Kulfi is an Indian icecream recipe made with milk and sugar. Learn how to make homemade icecream with 2 ingredients
- 1 litre milk full-fat
- ¼ cup granulated sugar use as per sweetness
In a pan, add the milk and cook on medium heat stirring occasionally
Everytime you notice a layer of cream forming on the top of the milk, use a spatula and keep picking the cream and placing it at the sides of the pan. Continue stirring the milk every 2 to 3 mins. Once the cream forms, again, do the same thing, place the layer of cream at the side of the pan. Do this till the milk reduces to half the quantity. Mix the cream well into the milk. You should now have a grainy and thick milk mixture
Next, add the sugar and stir till it dissolves. Switch off the gas, and let this mixture come to room temperature
Pour the mixture into a kulfi mould or icecream mould. Let it freeze for 4 to 5 hours or until set completely
To demould
Place the kulfi mould in a bowl of water for about 30 seconds. This will loosen the sides of the icecream and make it easier to demould the kulfi
Garnish the malai kulfi with nuts of choice and serve immediately
