This recipe is a twist to any regular cookie recipe. Its loaded with dried cranberries and crisp cornflakes. Cranberry Cornflakes Cookies are full of crunch in every bite along with bits of white chocolate and cranberries loaded in every cookie. It could be freshly baked or kept for days, these cookies will always stay crunchy and delicious.
- 150 grams salted butter room temperature
- 180 grams castor sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 110 grams cornflakes
- 240 grams flour
- 1 teaspoon baking powder
- 100 grams cranberries
- 50 grams white chocolate chips
Bake the cornflakes on a baking sheet lined with parchment paper for 10-15 mins at 170 degrees C
In a bowl, combine the flour & baking powder, mix well and set aside
In another bowl, beat the butter & sugar together until light & fluffy. Add the vanilla essence and eggs one at a time while beating
Beat the flour mixture into the batter and fold in the cornflakes along with the cranberries & white chocolate chips
Using an ice cream scooper, scoop out the batter and place them on a baking pan lined with parchment paper. Bake the cookies at 180 degrees C for 15-20 mins or until the cookies turn golden brown
