Learn how to make a ganache frosting using real blueberries. This Ganache recipe can be used as a frosting and filling in cakes, cupcakes and even macarons

Ingredients

  • 160 grams fresh bluberries (or frozen)
  • 20 ml lemon juice
  • 20 grams liquid glucose
  • 220 grams melted white compound chocolate
  • 30 grams salted butter, room temperature

Instructions

  • In a pan on medium heat, add bluberries and mash it up during the cooking process. Tip - You can even blend the blueberries into a puree and then cook it (this will be quick) No need to strain at this stage
  • Add the lemon juice and continue cooking on medium heat for a minute
  • Once done, strain this mixture and when still hot, add the liquid glucose
  • In another bowl, melt white chocolate and add it to this berry mixture. Add the butter and using a hand blender, blend everything well into a smooth paste
  • Once done, cling wrap the bowl and refrigerate for a few hours
  • You can now use this ganache in cakes, cupcakes, macarons and more
