These Healthy Almond Flour Cookies are eggless and make a perfect Healthy Vegan Breakfast Cookie Recipe. These No flour cookies contain natural sugar, ginger & cinnamon. They have a chewy grainy texture on the inside and a crisp texture on the outside
- 140 grams Almond flour
- 35 grams Coconut sugar
- ¼ tsp Cinnamon powder
- ½ tsp Dried ginger powder
- ¼ tsp Nutmeg, grated
- Pinch of salt
- ¼ tsp Baking Soda
- 3 tbsp Coconut oil
- 2 tbsp Honey or maple syrup
- ½ tsp Vanilla essence
- 1 tbsp Flaxseeds powder
- 3 tbsp Warm water
Firstly, combine the flax seed powder and warm water together. Mix well and let it sit for 5 to 10 minutes before using
In a bowl combine the almond flour, coconut sugar, cinnamon powder, ginger powder, grated nutmeg, salt, and baking soda. Mix well and set aside
In another bowl, combine the wet ingredients - The prepared flax seed mixture, coconut oil, vanilla essence and, honey. Whisk well and pour this into the almond flour mixture
Bring it all together using a spatula. It should form a smooth dough
Cling wrap and let it sit in the refrigerator for 30 minutes. Once chilled, scoop out medium-sized dough balls using an ice cream scooper
Make a smooth cookie dough ball and place it on a baking tray lined with parchment paper (make sure the cookies are not too close to each other as they spread during the baking process)
Slightly press each cookie ball with the palm of your hands to flatten it
Bake at 180 degrees C for 15 to 20 minutes or until golden brown
Bake the cookies in the middle rack of the oven
Do not bake it for too long as they would tend to become hard once out of the oven if overbaked
You can even use maple syrup instead of honey
