This is the Best Carrot Cake Recipe as it is simple and moist. The cream cheese frosting recipe is smooth and goes really well with the yummy carrot cake
For the cake:
- 2 eggs
- 200 grams castor sugar
- ½ tsp vanilla extract
- 200 ml oil (any unflavored oil)
- 200 grams all-purpose flour
- ¾ tsp spice powder (recipe in the post above)
- 2 tsps baking powder
- 65 ml milk
- 200 grams carrots, grated
- 100 grams walnuts, chopped
For the Frosting:
- 140 grams cream cheese
- 90 grams salted butter
- 470 grams superfine icing sugar
For decorating (optional):
- 100 grams fondant or sugar paste
- Few drops Orange food coloring
- Few drops Green food coloring
For the cake:
In a bowl, combine the flour, spice powder and baking powder. Then, mix well and set aside
In another bowl, beat the eggs, sugar, and oil together. Thus, this mixture should turn light & fluffy. Next, add the vanilla essence and beat well. Add in the flour and mix well. Next, add the milk and mix well. As a result, at this stage, the batter shouldn't have lumps
To this, add the carrots and walnuts. Thus, mix well and pour in a 6-inch baking dish
In conclusion, bake in a preheated oven at 170 degrees C for 40 to 50 mins. Or until an inserted skewer comes out clean. Once baked, let it come to room temperature before being frosted
For the frosting:
Firstly, make sure the ingredients are at room temperature. Now, beat the butter and cream cheese together
Next, add the icing sugar a little at a time. Add all of it and beat well making sure the ingredients are well combined. As a result, the mixture should feel creamy and fluffy
Then, cut layers of the carrot cake and spread the cream cheese frosting between each layer. Then, cover the cake all around with a lot of cream cheese frosting. However, I like the naked cake look . Therefore, I add less to the sides of the cake
Next, color some of the fondant green, and some orange. To garnish, make carrot shapes using fondant just like shown in the video below. In conclusion, place them all around the cake and serve
