This Almond Yogurt Cake or yoghurt cake is an almond flour cake recipe made without refined flour. It is a delicious soft almond cake recipe made with almond flour and yogurt
- 100 grams fine sugar 1/2 cup
- 210 grams greek yogurt 3/4 cup
- 1 tsp vanilla essence 5 ml
- ½ tsp baking soda
- 3 eggs
- 80 grams salted butter, melted 1/3 cup
- 190 grams almond flour 2 cups
- 1 ½ tsp baking powder
- 12-15 almond flakes, for garnishing
In a bowl, add the castor sugar, room temperature yogurt and vanilla essence. Mix well until the sugar has dissolved a little. To this mixture, add the baking soda and whisk well. Keep this mixture aside for 2 to 5 mins. It should become frothy
Next, add the eggs and melted butter and whisk
Lastly add the almond flour and baking powder to the mixture. Form a smooth lump-free batter and pour in a 6-inch baking dish lined with parchment paper. Sprinkle a few almond flakes on the top. Tap the dish and bake this cake for 40 to 50 mins at 180 degrees C (350 degrees F) or until an inserted skewer comes out clean
Store this cake in the fridge for 5 to 6 days
Stays at room temperature for a day or two
