These freshly baked Farmhouse Cookies are so crisp and flaky. They're overloaded with nuts, cornflakes, and more goodness. Simply perfect for a quick snack or even to munch on when you have no time for breakfast.

Ingredients

  • 120 grams  salted butter, room temperature 1/2 cup
  • 100 grams  light brown sugar 8 tbsps
  • 70 grams crunchy peanut butter 5 tbsps
  • 1 egg
  • 50 grams all purpose flour 1/2 cup
  • 2.5 ml baking powder 1/2 tsp
  • 2.5 ml ground cinnamon 1/2 tsp
  • 180 grams Muesli 1/2 cup
  • 50 grams raisins 1/2 cup
  • 50 grams walnuts, chopped 1/2 cup

Instructions

  • Beat the butter & sugar together until fluffy
  • Add in the egg & peanut butter as well, beat well
  • Add in the flour, baking powder and cinnamon powder to the mixture and mix well
  • Once well mixed, add the muesli, raisins & walnuts to the mixture. Make sure all the ingredients are well combined
  • Using 2 spoons or an ice cream scooper, scoop the mixture and place onto a baking tray lined with parchment paper. If you want a more precise shape you can even use your hands to mold the mixture
  • Bake the cookies at 180 C for 15 to 20 mins, until golden brown. Once baked let cool for 10 mins and then all you need to do is EAT..

Recipe Notes

You can even add a few more nuts of your choice to the mixture (eg Cashews, almonds, etc)
Always store the cookies in an airtight container to make sure they remain crunchy
Do not let the cookie mixture stay unbaked for long as the muesli in it may get soggy
