This vegetarian Healthy Avocado Sandwich is the best option for your hungry taste buds. A quick and easy sandwich recipe loaded with the goodness of tender coconut

Ingredients

  • 1 big sized Avocado, chopped
  • ½ cup Tender coconut pieces, chopped
  • 8-10 bread slices ( I used mixed seeds bread purchased from a bakery near me)
  • 2 tbsp butter, for toasting the bread (optional)
  • 1 tbsp Lemon zest
  • ¼ tsp salt
  • ½ tsp chili flakes
  • 1 tsp mixed herbs
  • ½ tsp crushed pepper
  • 1 tbsp honey
  • 2 tsp Lemon juice
  • 1 tbsp olive oil
  • 1 tomato, sliced

Instructions

  • Keep the bread slices ready and toast them with some butter. However, this is completely optional
  • In a bowl, add in the lemon zest, salt, chili flakes, mixed herbs, and crushed pepper. Mix well
  • Add the chopped avocado, lemon juice, and olive oil. Using a fork roughly mash it up. Add the honey and mix well 
  • Spread the prepared avocado mix on the bread slices making sure you put a good amount on each slice
  • Top it up with lots of chopped tender coconut and 2 slices of tomato. Put another slice of bread and bite into your ready sandwich
