Easy Sandwich recipe with the goodness of veggies. This recipe has some basic ingredients as per my personal liking, however, you can modify it as per your taste and preference

Thus, this is a creamy avocado spread with mild flavors and tender coconut flakes and sliced tomatoes

Avocado is good for health and thus this is the perfect breakfast option

I’ve used mixed seed bread that I found in my local bakery however, you can use any bread of your choice

Avocado Breakfast Sandwich Recipe 

So, I normally make sure to upload one recipe every week. But the previous week has been so busy for me with the baking of communion cakes so after my Strawberry Chiffon Cake Recipe I haven’t posted any. But finally, after all the calories I’ve put on by eating so much cake during the making of the communion cakes, I decided to make a healthy sandwich recipe

Because this sandwich is easy to make it is my go-to meal. Avocado is loaded with so much goodness and can be used in so many ways. So, you can either eat the fruit all by itself or create so many recipes using this fruit. As a result, from soups to salads and even sandwiches. Sandwiches are my personal favorite !! And a sandwich loaded with avocado is simply delicious

Lastly, this avocado sandwich spread is healthy with the right amount of simple flavors and a crunch of the chopped tender coconut pieces. Moreover, the tomatoes add in juiciness and honey & lime give it the right balance. The addition of lemon zest may sound too much to you but this is what makes the spread flavorful and different from the regular avocado sandwiches

CHUNKS, CHOPPED OR MASHED AVOCADOS? (Healthy Avocado Sandwich Recipe)

It totally depends on how you like it when you bite into an Avocado sandwich 

I like biting into a sandwich which has chunks of avocado but with a mushy texture. So when I mix the avocados with the other ingredients, I use a fork to mash it up making sure I don’t overdo it. keeping in some bits and pieces of avocado in this spread is so much better

However, some of you may like a smooth texture of this spread. Go ahead and mash it up completely !!

However, if you like only chunks, chop it up and just mix in the other ingredients (no mashing)

Recipe – Healthy Avocado Sandwich Recipe

Ingredients 

  • Avocado – 1 big sized, chopped 
  • Tender coconut – 1/2 cup, chopped 
  • Bread – 8-10 slices ( I used mixed seeds bread purchased from a bakery near me)
  • butter – 2 tablespoons, for toasting the bread (optional)
  • Lemon zest – 1 tablespoon
  • salt – 1/4 teaspoon 
  • chili flakes – 1/2 teaspoon
  • mixed herbs – 1 teaspoon
  • crushed pepper – 1/2 teaspoon 
  • honey – 1 tablespoon 
  • Lemon juice – 2 teaspoons
  • olive oil – 1 tablespoon 
  • tomato – 1, sliced 

Method (Healthy Avocado Sandwich)

  • Keep the bread slices ready and toast them with some butter. However, this is completely optional
  • In a bowl, add in the lemon zest, salt, chili flakes, mixed herbs, and crushed pepper. Mix well
  • Add the chopped avocado, lemon juice, and olive oil. Using a fork roughly mash it up. Add the honey and mix well 
  • Spread the prepared avocado mix on the bread slices making sure you put a good amount on each slice
  • Top it up with lots of chopped tender coconut and 2 slices of tomato. Put another slice of bread and bite into your ready sandwich 

Note 

We like to serve it once ready, however, you can even chill it in the refrigerator before serving. Also, you can serve it with some mayo or chutney, whatever way you’d like it
