This Healthy Strawberry Custard Recipe is a baked custard which is low calories and made with lesser refined sugar
- 2 eggs
- 2 tbsp maple syrup OR honey
- 125 grams greek yogurt
- ¼ tsp vanilla essence
- grated zest of 1 lime
- 4 ripe strawberries, roughly cut
- 2 tsp castor sugar
- butter, for greasing the baking dish
In a small bowl, combine the chopped strawberry pieces with the castor sugar. Mix well and set aside for 5 mins
In a blender, add the eggs, honey or maple syrup along with the yogurt, vanilla essence and lemon zest. Blend well for about a minute or until the mixture is creamy and well combined
Grease ramekins or a baking dish with butter and pour the mixture into the ramekins (a little less than upto 3/4)
Next, sprinkle the strawberry pieces in the cutard and place these ramekins or the baking dish on a tray with hot water (water bath). Bake it at 180 degrees C for 30 minutes approx or until the center of the custard feels wobbly and not liquidy when touched
Once at room temperature, set the custard in the fridge for 3 to 4 hours and then serve
You may add more strawberries to the recipe if you'd like
Baking the custard in a waterbath is essential to make sure the custard is not dry after baking
