This Homemade Baileys (Irish Cream Whiskey) recipe is going to get all friends and family excited as well. If you are a Baileys fan, you definitely in for some fun. This recipe stays true to everything you expect when making a homemade version of the classic Irish Baileys
- 280 ml full-fat milk
- 60 grams granulated sugar
- 10 grams chopped dark chocolate
- 150 ml full fat cream
- 300-400 ml Irish whiskey depending on how strong you'd like it to be
- ½ teaspoon instant coffee powder
- ½ teaspoon vanilla essence
In a pan, add the milk & sugar together. Cook on medium heat for 20 mins or until it reduces. You want the milk to be creamy & thick. When you dip a spoon into the milk it should coat the back of your spoon that is when you know you need to remove it from the heat
Mix the chopped chocolate into the hot milk mixture making sure there are no lumps remaining.
Cling wrap the bowl and refrigerate for an hour. You will notice the milk has thickened much more
Using a hand beater, beat the milk mixture well on medium speed. Add the cream, coffee and vanilla essence beat well. Now add the whiskey according to how strong you would like it. Continue beating for about a minute or two
Strain the mixture to remove any lumps of chocolate or coffee granules
Store in a bottle and let cool before serving
Keep stirring the milk & sugar mixture constantly while heating to make there are no lumps formed and also cos you do not want to burn the milk
Store in a bottle, do not keep uncovered in the fridge. It may form a thick layer of cream on the top
This homemade baileys stays well for 2-3 weeks
