Moreover, you do not want to compromise on taste & consistency. Thus, using full-fat milk & cream is essential. It gives you the right amount of creaminess and also tastes better
COFFEE for Homemade Baileys Irish Cream
In this recipe we use instant coffee, make sure you do not go overboard with the use of coffee, we making baileys not cold coffee. If you add more, flavors change. I remember adding a teaspoon more and my sister actually thought it was cold coffee with a funny aftertaste. So just the mentioned amount is good and not more.
WHISKEY
One of the most important ingredients is whiskey. For best results, I like to use Irish whiskey. If you do not have Irish whiskey you can use whatever is easily available however the amount depends on how strong or mild the flavors are. I personally always use Irish whiskey, it is one of the reasons homemade baileys taste as good as original Baileys. So IRISH WHISKEY it is

Homemade Baileys (Irish Cream Whiskey) Recipe
Ingredients
- 280 ml of full-fat milk
- 60 grams granulated sugar
- 10 grams chopped dark chocolate
- 150 ml full fat cream
- 300-400 ml Irish whiskey (depending on how strong you’d like it to be)
- ½ teaspoon instant coffee powder
- ½ teaspoon vanilla essence
Instructions (Homemade Baileys)
- In a pan, add the milk & sugar together. Cook on medium heat for 20 mins or until it reduces. You want the milk to be creamy & thick. When you dip a spoon into the milk it should coat the back of your spoon that is when you know you need to remove it from the heat
- Mix the chopped chocolate into the hot milk mixture making sure there are no lumps remaining.
- Cling wrap the bowl and refrigerate for an hour. You will notice the milk has thickened much more
- Using a hand beater, beat the milk mixture well on medium speed. Add the cream, coffee and vanilla essence beat well. Now add the whiskey according to how strong you would like it. Continue beating for about a minute or two
- Strain the mixture to remove any lumps of chocolate or coffee granules
- Store in a bottle and let cool before serving
Notes
- Keep stirring the milk & sugar mixture constantly while heating to make there are no lumps formed and also cos you do not want to burn the milk
- Store in a bottle, do not keep uncovered in the fridge. It may form a thick layer of cream on the top
- This homemade baileys stays well for 2-3 weeks
