Brownie Cupcakes Recipe
So, I recently made a big batch of these for my little cousins birthday party for all the kids that came over. Moreover, this was a sure hit among all. Also, chocolate and children are a match made in heaven and this one can never go wrong. The fluffy cupcake, when topped with a silky frosting, is just delicious and irresistible. My family now wants to have these served at every birthday party (with popular demand) So, that’s where I decided to call these The Birthday Chocolate Brownie Cupcakes

Double Chocolate Brownie Cupcakes
Now, I’m sure you’ve come across a lot of chocolate cupcake recipes and are wondering why is this special or why should you try this out. Well !! If you love brownies you’d love this one. Their rich, dark, moist with a crumbly texture and a double chocolate finish. That frosting up there is the crown to this cupcake and surely takes it to the next level. In short, if you love brownies you need this recipe !!
EGG REPLACEMENT
Above all, I’m not someone who would substitute eggs for this recipe, however, just in case some of your’ll are curious to do so here’s what you can do to make an eggless version of these cupcakes
So, you can use egg replacement powder.
Measurement: 1 egg = ½ tablespoon egg replacement powder + 2 tablespoons of water
Mix the water and powder together and add to the batter just like you would add the eggs

Let’s talk ingredients and process.. (Chocolate Brownie Cupcakes)
Eggs
Firstly, the egg is what gives these cupcakes its beautiful soft texture. So, the 1st step is to beat the sugar and eggs together. Now, this is an important step. And therefore, you need to make sure you do it well. Beat these ingredients together using an electric beater on high speed for about 3 to 4 mins. The mixture should double in volume. The mixture should turn from yellow to a pale white in color. Once done, only then move to the next step
Chocolate & Butter
The best chocolate yields the best cupcakes. Also, when it comes to butter I always recommend salted butter. Locally, Amul butter is easily available and it has always been an absolute favorite. To make these cupcakes, the chocolate and butter need to be melted together and then added to the cupcake batter. To do so, chop the chocolate finely, top it up in a bowl with the butter and microwave it in intervals of 30 seconds making sure you mix it after every interval to avoid the chocolate from burning. Alternatively, you can also melt the chocolate and butter onto a double boiler, again, making sure you mix it every time to avoid it from burning
Since you’ve now got the basics, let’s get started with baking …

Recipe – Birthday Chocolate Brownie Cupcakes (The Ultimate Brownie Muffins)
Ingredients
For the cupcakes
- salted butter – ½ cup (115 grams)
- chocolate, chopped – 4 oz (120 grams)
- 2 large eggs
- castor sugar ¾ cup (160 grams)
- all-purpose flour ⅓ cup (45 grams)
- unsweetened cocoa powder ⅓ cup (35 grams)
- baking powder ½ teaspoon
For the frosting
- salted butter ½ cup (115 grams)
- vanilla essence ¼ teaspoon
- icing sugar, sieved 1 ¾ cup (220 grams)
- cocoa powder ¼ cup (20 grams)
- heavy cream 2 tablespoons
Instructions (Brownie Cupcakes)
For the cupcakes
- Firstly, in a bowl add the chopped chocolate and butter together. Place it in the microwave or onto a double boiler to melt. Make sure to mix it constantly to avoid the chocolate from burning
- Next, in another bowl, combine the eggs and sugar together. Beat on high speed for 3 to 4 mins or until this mixture turns double in size and fluffy. Add the melted chocolate & butter to this mixture and continue beating until all the ingredients are well combined
- Now, in another bowl, sieve the all-purpose flour, cocoa powder, and baking powder together. Mix well. Next, add this to the egg & chocolate mixture. Fold the flour mixture into it making sure there are no lumps.
- Fill a few cupcake liners with batter a little less than ¾ of each cup. Bake in a preheated oven at 180 degrees C for 20 to 25 mins or until an inserted skewer comes out clean (sometimes it takes just 15 mins to bake so keep watching)
- Once done, let the cupcakes come to room temperature before you crown them with frosting
For the frosting
- In a bowl, sieve the icing sugar and cocoa powder together. Mix well. (let’s call this the dry mixture)
- In another bowl, using an electric beater, beat the butter & vanilla essence until it turns light and fluffy. Add the dry mixture a little at a time beating well after every addition. Also, add the heavy cream to this mixture.
- Continue adding all the dry mixture of sugar and cocoa powder to the butter mixture. In the end, this mixture should feel light, fluffy and smooth just like how a frosting should be.
- Put this mixture in a nozzle bag and frost it onto the cupcakes. Top it up with some chocolate pieces. You’re done !!
