During the class

-Different types and brands available, details on quality, sheen, texture, etc
-Working with cocoa butter
-Designs, cocoa butter textures & patterns
-Creating chocolate fillings with the right consistencies
-Working with texture sheets
-Making of bonbons & pralines
-Perfect sheen & finish
-Working with flavors & pastes
-Pricing, storing & packaging
We will also be working with a few fillings however you will also be provided with recipes to create some more fillings. Praline paste, fruit coolies, flavored ganache fillings will also be discussed.
