However, in this process, I’ve landed up disliking a lot of healthy baked recipes that are loaded with healthy ingredients but taste nothing like what it should taste like. So I’ve been baking, day in and day out only to discover recipes that are not just appealing to the eyes but also to your taste buds

Oats Flour, Almond Flour & All-purpose flour – Combination of 3 flours to make healthy oat muffins

In this recipe, I’ve used a combination of three types of flours. Firstly, oats flour adds a healthy touch and is a good substitute for all-purpose flour. Almond flour is a good binding agent and also adds a nutty flavor. This recipe contains just a little bit of all-purpose flour to keep up to the right texture

Coconut Oil & Coconut Sugar

Coconut products make a healthy substitute in many recipes as they are natural unlike the refined versions available in the market. Also, you can substitute coconut oil with butter if you’d like. Coconut sugar can be substituted with jaggery powder as well. Adjust the sweetness of these healthy oat muffins as per taste

Almond Milk

Almond milk is a non-dairy substitute for regular milk however feel free to use regular milk in you’d like that. You can even use skimmed milk to make this recipe

How to make these delicious Oatmeal Cups (Healthy Oatmeal Muffins)

Ingredients

Oats flour 160 grams

Almond flour 60 grams

All-purpose flour 40 grams

Baking powder 1 teaspoon

Baking soda 1/2 teaspoon

Salt 1/2 teaspoon

Flaxseed powder 1 tablespoon

Warm water 3 tablespoons

Coconut Sugar 130 grams

Vanilla Essence 1 teaspoon

Coconut oil 70 ml

White vinegar 1/2 tablespoon

Almond milk 240 ml

Instructions (to make healthy oat muffins)

Combine the flaxseed powder and water, mix and set aside for 5 to 10 mins

In a bowl, combine the oats flour, almond flour, all-purpose flour, baking powder, baking soda, and salt. Mix well and set aside

In another bowl, add the prepared flaxseed mixture, coconut sugar, coconut oil, vanilla essence, and white vinegar. Whisk well. Thereafter, add the almond milk and continue whisking

Now, add the flour mixture to the wet ingredients and mix. Make sure there are no lumps.

Pour the muffin batter in cupcake liners up to 3/4 and bake at 180 degrees C for 20 to 25 mins or until an inserted skewer comes out clean

Ingredients

  • 160 grams Oats flour
  • 60 grams Almond flour
  • 40 grams All-purpose flour
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • ½ tsp salt
  • 1 tbsp Flaxseed powder
  • 3 tbsp Warm water
  • 130 grams Coconut Sugar 
  • 1 tsp Vanilla Essence
  • 70 ml Coconut oil
  • ½ tbsp White vinegar

Recipe Notes

You could even drizzle a little honey over the baked muffins if you want it sweeter

      1. Ive made these a few times now with jaggery powder and with date paste and they turned out good with both. i just used part of the almond milk to make a date paste and i used 130 gm of pitted mejdool dates.
