Ingredients for butter cookies
Butter
Like the name goes, these butter cookies are made of butter. And thus, using excellent quality butter is a must. Do not substitute butter with oil, shortening or any other fat. I like to use good quality salted butter, it adds flavor to the biscuit
Sugar
Icing sugar is apt for a butter cookie. Icing sugar contains a little of cornflour, this helps to avoid the cookies from spreading too much. Regular ground sugar has high moisture content, which leads to a thinner cookie batter that eventually yields flat cookies after baking
Vanilla Essence
Vanilla is what adds flavor to these cookies. Using excellent quality of vanilla essence is a must
Egg yolk
Not the full egg, but only the egg yolk. This also helps with the beautiful golden brown cookie color
Cream
Just a little bit of cream balances the consistency of the batter and taste of these danish cookies
All purpose flour
Use regular all purpose flour with no baking powder or baking soda added to it. Skipping the baking powder and baking soda yields butter cookies without any cracks
Cornflour
Cornflour thickens the batter and also yields cookies that are crisp
How to make a butter cookie?
1st Step to making homemade butter cookies
Beat the butter, sugar and vanilla essence really well. Adding the essence at the initial stage helps the flavor to combine well
2nd step
Add the egg yolk & cream to the batter. Mix really well. At this stage, you should have a creamy batter
3rd step
Mix in the all purpose flour and cornflour too. You want a smooth batter with no lumps
4th step
Put the cookie mixture in a piping bag and pipe the cookies onto a baking tray. Chill the piped cookies in the refrigerator for 30 minutes before baking
5th step
Bake at 170 degrees C for 15 to 20 mins or until the cookie is golden brown in color. Once out of the oven, let it cool for about 10 minutes till the cookie gets crisp. Enjoy !!
Tips to make the best butter cookies
- Use room temperature butter, not cold or melted butter
- Cream the butter & sugar well, and use an excellent quality of vanilla essence
- Always chill the piped cookies in the fridge for a while before baking. This makes sure the cookies do not flatten once baked
- Place the cookies on a tray lined with butter paper or parchment paper. This avoids extra browning on the base of every cookie
Decorating butter cookies
You may dip the homemade butter cookies in melted chocolate or royal icing
Can also be topped with sprinkles or nuts over the coated melted chocolate or icing on the cookies
Ingredients
- 115 grams salted butter, room temperature 1/2 cup
- 65 grams icing sugar 1/2 cup
- ½ teaspoon vanilla essence
- 1 tablespoon heavy cream
- 1 egg yolk
- 140 grams all purpose flour 1 cup
- 2 tablespoons cornflour 18 grams
Instructions
- In a bowl, combine the salted butter, icing sugar and vanilla essence. Beat well until creamy
- Next, add the cream and egg yolk to this mixture and continue beating
- Lastly, add the all purpose flour and cornflour too. Mix well, making sure there are no lumps
- Pour the mixture into a piping bag fitted with the wilton 1M nozzle. Pipe the cookies onto a baking tray lined with parchment paper making sure each cookie is at a distance from the other
- Place this tray in the refrigerator for 30 minutes before baking. Once chilled, bake these at 170 degrees for 15 to 20 minutes or until the cookies are golden brown
- Once baked, let the cookies sit at room temperature for 10 minutes before serving. This lets the cookie get a little crisp
