Firstly, this is the dessert I love the most. Also, I’m crazy about how stunning it looks and how delicious it tastes. 

I belong to a family of Tart lovers which made it really important for me to own foolproof good recipes that I could bake and share with family & friends. My recipes are real tried & tested recipes and will only be introduced to you if they’re approved by my mom (who is indeed a food expert)

The Strawberry Grape Panna Cotta Tart

is a true stunner among all my dessert recipes till date. It’s not one of those recipes I found online or in some recipe book, however, it just came up while I was thinking of creating some combinations using various ingredients. This tart now serves on my Top dessert list as its the perfect combination of creamy, rich, buttery, crisp, fresh and simply delicious. Now that’s a lot of goodness I’m sharing with you so let’s not waste time and let’s get started …

To make the crust (tart shell) you need to follow my Sweet Pastry Crust Recipe which is right here. Moreover, I’ve given you a step by step guide to making a good tart crust. Therefore, don’t forget to read the full post. Because you do not want to go wrong at any point. 

Tip (Strawberry Panna Cotta Tart)

Most importantly, while you blind bake the tart shell, make sure to brush on some egg once the tart is half-baked. As a result, this will make sure the filling does not make the tart soggy once added to the tart.

Strawberry Grape Panna Cotta Tart

Panna Cotta is a rich & smooth dessert and is going to be used as a filling for this recipe. In addition, the fruits added to it enhances the freshness of this dessert. 

Recipe – Strawberry Grape Panna Cotta Tart (Panna Cotta In A Tart Recipe)

When the creamy pannacotta is combined with a crisp tart and fresh strawberries & grapes all you need to do is bite into it and enjoy the blast of flavors

Ingredients

  • 7 inch Sweet Pastry Crust Tart Shell
  • (Look up for my sweet pastry crust recipe)

For the Panna Cotta Filling

  • 30 ml full-fat milk, cold
  • 1 1/2 teaspoon unflavored gelatin
  • 280 ml full-fat dairy fresh cream
  • 50 grams castor sugar
  • 1/2 teaspoon vanilla essence or 1 vanilla pod
  • 6-8 strawberries, cut into halves
  • 8-10 grapes, cut into halves

Instructions – Strawberry Grape Panna Cotta Tart

  • In a small bowl, bloom the gelatin in the cold milk for 5 mins

To make the Panna Cotta (Panna Cotta Recipe)

  • In a pan, heat the fresh cream & castor sugar. If you plan to use a vanilla bean, slit in the center and add it at this stage. Bring to a slight boil making sure all the sugar has melted
  • Reduce the heat (slow flame) and add the bloomed gelatin mixture. Mix well making sure there are no lumps. Cook for 2 to 3 mins and switch off the gas. If you plan to use vanilla essence this is the time you will add it. If you have used a vanilla pod, this is the time you remove it from the cooked mixture
  • Let this mixture cool for 5 to 10 mins and then you add it to the prepared sweet tart shell. Make sure to not overfill the tart as you still have to add the cut strawberries & grapes

Adding the Fruits (Berry Tart)

  • Once you have filled the tart with the pannacotta mixture, add the strawberries & grapes carefully making sure the cut side of the fruits faces downwards towards the tart. Do not overfill the tart with the pannacotta mixture as the fruits should not sink down but should be noticeable from the top
  • Carefully keep the tart in the fridge to set for 5 to 6 hours. Cut into pieces once firm

Notes

  • People who are not comfortable using gelatin can use gelatone (vegetarian substitute for gelatin) however you need to increase the quantity by adding 2 teaspoons instead of 1 1/2 teaspoon as gelatone is not as strong as gelatin sets
