Its delicious and a perfect snack to munch on when hunger strikes. Most of the ingredients are oven toasted and then combined with meringue and baked, this makes the granola crisp with the crunchy texture.

On my blog, I have a special section especially for granola, granola bars, and bites. This is because my mother loves granola which makes me work on it pretty often. I enjoy combining all my favorite foods while making granola, or maybe combining all her (my mom) favorite foods while making granola. That’s why she loves it so much.
Homemade Granola Bites (Granola Cookie Bites)
This recipe is easy and so crisp. It’s nothing like the store-bought granola. Freshly baked, hot granola cookies are out of this world, so tender and crunchy loaded with lots of flavors. My mom says they go well with chai (tea) however I pop them in my mouth whenever I’m hungry and need a snack.
Oven Toast Ingredients to make these granola cookie bites
Firstly, to bring out the real flavor of the nuts & seeds. Toasting them in the oven is essential. This makes the ingredients crisp. I even toast the coconut until light brown. While toasting the oats make sure to toss them once during the baking process. When most of our ingredients are toasted they give the granola the right amount of crispness and enhanced flavors.
You need not toast ingredients like rice crispies or raisins.
Making The Meringue
Meringue is a combination of egg whites and sugar. Using a blender this mixture needs to be beaten until stiff peaks. In case you feel your egg whites do not form stiff peaks add a pinch of cream of tartar to the mixture. The meringue is another ingredient which makes these granola’s crisp.
Customize Your Granola Cookie Bites Recipe
So, make the granola with ingredients you like. It’s not compulsory you like pumpkin seeds if I like pumpkin seeds. So come up with your own variation of nuts, fruits, and seeds that need to be added to the granola. Example: Add 1/4 cup of dates if you like them instead of any fruits like raisins if you don’t like them or maybe 1/4 cup of mixed dates and raisins.
Homemade Granola Cookie Bites Recipe
Ingredients
1/4 cup rice crispies
1/4 cup desiccated coconut
3/4 cup Oats
1/4 cup nuts (roughly diced), (almonds/hazelnuts/ pistachios/ cashews/ walnuts/ etc)
1/4 cup seeds (pumpkin seeds, flax seeds, etc)
2 tablespoons coconut oil
1/4 cup raisins (or any dried fruit)
1/8 cup chocolate chips
A pinch of cream of tartar (optional)
egg white of 1 large egg
1/4 cup castor sugar
1/4 teaspoon cinnamon
Instructions (Granola Cookie Bites)
Line 2 trays with baking paper. On the first tray, add the oats and nuts. On the other tray add the desiccated coconut and seeds. Place both trays and toast in a preheated oven at 170 degrees C for 15-20 mins. The coconut should turn light brown. Let this cool for 10 mins
In another bowl, beat the egg white (with the cream of tartar) until soft peaks, gradually add the castor sugar. Beat on high speed until it forms stiff peaks. Add all the roasted ingredients along with the rice crispies, chocolate chips, raisins, cinnamon, and coconut oil. Combine all of it well.
Using an ice cream scooper or 2 spoons, scoop out small amounts of the mixture and place on a baking tray lined with parchment paper. Next, bake this in a preheated oven at 180 degrees C for 20-25 mins or until the cookies are firm and golden brown on the bottom.
