Fruit Crumble bars are so easy to make and my family loves to binge on these. All you need to do is toss up the ingredients and any fruit that’s available is good to use.
Among all the crumble bar recipes I’ve tried, the raspberry crumble bars are my absolute favorite as it has a good balance of sweet and sour flavors with a buttery crumble in every bite.

Ingredients Required To Make Berry Crumble Bars (Raspberry)
Raspberries
Firstly, fresh raspberries are the best when it comes to making crumble bars. But, I live in India and raspberries are not very common out here. However, what I get easily are the frozen raspberries. Thus, my raspberry crumble is made using frozen fruit. (Do not puree the fruit, the chunkier the better)
Butter
Use cold salted butter to make any berry crumble recipe. As a result, it turns out to be more flaky and delicious with finer crumbs (I’m saying this with experience) My all-time favorite butter brand is Amul (easily available to us in India)
Egg
This recipe calls for an egg yolk to be used. However, if you’re not comfortable with using eggs, you can substitute that with 3 tablespoons of milk

Raspberry Crumble Bars Recipe
Ingredients
For the crumble:
All-purpose flour 200 grams
Baking powder 1/2 teaspoon
Castor sugar 100 grams
Egg yolk 1
Salted cold butter 120 grams
For the filling:
Raspberries (frozen or fresh) 200 grams
Cornflour 15 grams
Castor sugar 50 grams
Instructions to make Raspberry Crumble
Firstly, in a bowl, combine the raspberries with the sugar (50 grams) and cornflour. Mix well and set aside
In another bowl, combine the all-purpose flour, sugar (100 grams) and baking powder. Mix well
Add the cold butter cubes and egg yolk. Crumble using your fingers. You want it to be like bread crumbs in texture
Next, take a baking dish, grease it with butter and pour 3/4th of the prepared crumbs into it. Lightly press the mixture down. Gently pour the raspberry mixture onto it and spread evenly. Now, pour the remaining 1/4th crumbs onto it and press gently to form a layer
So, now you have 3 layers – Crumble – Raspberry mixture – Crumble
Bake this in a preheated oven at 180 degrees C for 40 to 45 mins or until golden brown
Once baked, let it come to room temperature, cut bars and serve or simply scoop it up when piping hot. Enjoy !!
