It’s made with sticky rice also known as sushi rice

It’s quite heavy to eat, thus its best to enjoy just small portions of the beauty

Ingredients to make Thai Mango Sticky Rice Dessert

Mango

It’s best to use ripe and sweet alphonso mangoes for this recipe. However, you may use whichever type is easily avaiable to you as long as its a bright yellow, sweet and ripe mango

Sticky Rice

Popularly in Thailand, Jasmine rice is used to make this dish. It is a fragrant rice with a glutinous texture perfect for the recipe. I’m using sticky rice also known as sushi rice which does the same job as Jasmine rice. For the fragrant feel, you may throw in some pandan leaves during the cooking of the rice. Take it off from the rice once cooked, this is only to add a fragrance to the rice

Sugar

Sugar can be increased or reduced in this recipe as per taste. Remember the sweeter the mango, the lesser sugar you add to balance flavors. Note that commonly brown sugar is used to make thai sticky rice. But you may use white sugar like I did

Coconut cream

Coconut cream is thicker and richer as compared to coconut milk. Thus, adding cream, yields a creamier rice and sauce for this recipe. Shake the pack of coconut cream well before using

Cornflour

To make the sauce a tablespoon of cornflour is needed. Tip – Whisk the cream into the cornflour while making the sauce. This ensures there are no lumps in the mixture

How to make thai sticky rice

Firstly, wash the rice well and soak it for 15 minutes before cooking. This helps to cook it faster

In a vessel, combine the water, coconut oil, salt and rice. Cover with a lid and cook for 10 minutes

Next, add the coconut cream and sugar. Cover with a lid and let the cook well. Take it off the gas once done

For the sauce

Combine cornflour, sugar and salt on medium heat and cook for a minute. Whisk in the coconut milk and cook until it thickens a little

Take it off the gas once done

For the final presentation

Take a plate, add the rice dome, top it up with some coconut sauce and garnish with mango slices. ENJOY !!

Ingredients

For the rice mixture

  • ½ cup sticky rice 115 grams
  • 1 cup water 240 ml
  • 1 cup coconut cream 100 ml
  • 1 tbsp coconut oil
  • Salt as per taste
  • 2 to 4 tbsp sugar (as per taste)

For the coconut sauce

  • ½ cup Coconut cream
  • 1 tbsp cornflour
  • Pinch of salt
  • 2 tbsp sugar (or as per taste)

For garnishing

  • 1 big alphonso mango, ripe (cut into slices)

Instructions

For the rice mixture

  • In a bowl, wash the sticky rice 2 to 3 times or until the water turns transparent. Soak it for 15 minutes before cooking
  • Next, take a vessel, add the water, coconut oil, salt and washed rice to it. Cover the vessel with a lid and cook the rice for 10 minutes and then add the coconut milk and sugar to the mixture. Continue cooking until the rice feels cooked (the rice should feel grainy in texture and not mushy)
  • Switch off the gas and set aside

For the sauce

  • In a pan, combine the cornflour, sugar and salt. Toss on medium heat for a minute. Whisk in the coconut cream and cook until it thickens a bit (takes about 2 to 3 minutes) Take it off the gas once done

For the final presentation

  • Take a bowl and lightly press the rice mixture in it. Tilt this bowl onto a plate to form a rice dome. Pour the coconut sauce on the side of the rice along with slices of fresh mango
