Recipe Card – Chocolate Oats Banana Muffins
Ingredients
- 3 ripe bananas, big size
- 2 eggs
- ½ tsp vanilla essence
- 70 grams oil
- 120 grams honey or maple syrup
- 180 grams oats flour
- 30 grams cocoa powder
- 1 tsp baking soda
- pinch of salt
- 100 grams couverture dark chocolate, chopped
Instructions
- In a big bowl, mash bananas using a fork or masher. Add the eggs and vanilla essence. Combine all well
- Next, add oil and honey to the mixture, Whisk until well combined
- Add the oats flour, cocoa powder, baking soda and salt, Mix well using a whisk
- Add some chocolate chunks to the batter and then pour this batter into muffin cups upto 3/4th. Top it up with more chocolate chunks
- Bake at 180 degrees C for 15 to 20 mins (I use the top & bottom baking mode)
- Do not overcook, or else the muffins turn dry. Once baked, top it up with a drizzle of melted chocolate and serve
