Breakfast Pancakes are a favorite among kids. Their known to have a fluffy texture due to the all the purpose flour and sweet taste due to the sugar added to it

Here’s my perfect breakfast pancakes if your looking for a classic version

For a healthier option, we making our pancakes this time with oats and natural sweeteners like honey OR maple syrup. Their easy to make and you do not need any fancy equipments

Ingredients to make Healthy Pancakes

Oats

We using rolled oats instead of all purpose flour for a healthier version of these pancakes. You may use instant oats if you do not have rolled oats

Banana

Over ripe banana is sweeter and works best for these pancakes. Helps with taste and texture

Honey Or Maple Syrup

This recipe also has a bit of natural sugar like honey or maple syrup. You may add a little more or less as per taste

Milk

I’ve used full-fat regular milk. But feel free to use almond milk or soya milk as per choice

Baking powder and Baking soda

Both these ingredients are essential to get a fluffy and good textured pancake. Do not skip either. Add the baking powder and baking soda just before you start cooking the pancakes in a pan

Berries

Berries are the best friends to pancakes. Serve the pancakes with fresh or frozen berries of your choice. It could be strawberries, blueberries, raspberries or any other fruit you’d like

Egg

Egg gives this pancake its fluffy texture a good taste. You may use a flax egg version if you’d like to skip the egg from this recipe. Or simply use egg replacement powder in this mixure

Ingredients

  • 2 cups rolled oats
  • 1 big sized ripe banana
  • 1 egg
  • 1 cup milk of your choice
  • 2 tbsp honey OR maple syrup
  • ½ tsp vanilla essence
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • pinch of salt

Top the pancakes with the following

  • 2 tbsps honey OR maple syrup
  • ½ cup berries of your choice
  • 1 tbsp butter

Instructions

  • In a mixer grinder, add the rolled oats and grind into a flour like consistency. The finer the better
  • Next, add the following ingredients to the grinder – banana, egg, milk, honey, vanilla essence, Blend well until it forms a smooth batter
  • Pour this mixture in a bowl and let it rest at room temperature for 10 mins. The mixture will thicken
  • Lastly, add the baking powder and baking soda to the batter and whisk well making sure there are no lumps
  • To make the pancakes, take a pan on low to medium heat. Brush a little butter onto the pan and add a big spoon of the mixture to form the pancake. Cook the pancake on one side for 2 to 3 minutes and flip. Cook again for 2 minutes or until golden brownie on both sides
  • Stack the pancakes on a plate and drizzle with honey. Top it up with butter and fresh berries of your choice
