- ¼ tsp cream of tartar
- 100 grams castor sugar
Part 2
- 6 egg yolks, large
- 50 grams castor sugar
- 50 ml milk
- 50 ml oil
- ½ tsp ube extract
- ½ tsp vanilla essence
- few drops of edible purple color (optional)
- 100 grams all purpose flour
- 20 grams cornflour
Part 3 – Cream cheese ube frosting
- 100 grams cream cheese, room temperature
- 20 grams Icing sugar
- ½ tsp Ube essence
- ¼ tsp Vanilla essence
- 100 ml whipping cream, beat the cream to stiff peaks
- few drops of edible purple color (optional)
Instructions
Part 1
- In a bowl, beat egg whites using an electric beater. Add sugar a little at a time with cream of tartar. Beat until semi stiff peaks (do not overbeat)
Part 2
- In another bowl, combine sugar, milk, oil, egg yolks, ube extract and vanilla extract. Beat well and add all purpose flour and cornflour. Make a smooth batter
- Fold in the egg white mixture using a spatula. Do not overmix or else the egg whites will loose its fluffy texture
- Pour the mixture in 2 trays (12inch by 9 inch) lined with parchment paper (do not grease the trays) Bake for 20 mins or until light brown at 180 degrees C (fill the trays with batter only upto 1.5 cm in height)
- Once baked, cool for 5 mins and then roll using a parchment paper. Be careful while rolling so the cake doesnt crack (remember, overbaking the sponge can make the sponge crack while rolling)

- To make the cream cheese ube frosting, take a bowl, add the cream cheese, sugar, ube extract and vanilla essence. Beat well until smooth
- Add the beaten stiff whipped cream. You may add some purple color if needed. This is your ube cream cheese frosting

- Using a palette knife, spread this frosting on the swiss roll and roll tightly. Cling wrap the roll and refrigerate for an hour or two
- Cut slices using a non serrated knife. Serve chill !!
