Secrets to making healthy guilt-free cookies
Almond Flour (for healthy cookies)
The best part about this recipe is that it has No Flour. Almond powder also known as almond flour is what we use instead of refined all-purpose flour in this recipe. It gives these biscuits a nutty flavor and also acts as a binding agent
Flaxseed Egg
Flaxseed egg is a combination of flaxseed powder and warm water. It has a sticky texture and acts as a substitute for eggs. However, in case you’re comfortable with the use of eggs, go ahead and substitute the flaxseed mixture with an Egg. I wanted to make this a healthy egg-free cookie recipe thus the use of flaxseeds
Spices
Ginger is the dominating spice in this recipe. It adds a traditional feel like ginger cookies but in a healthy manner. There are other spices like nutmeg and cinnamon as well. You can add or skip the spices as per choice but I have to agree, that spices do add a traditional touch to this modern-day healthy snack
Coconut Oil
Coconut oil is a great healthy substitute in a lot of baking recipes. Cookies normally have butter as an essential ingredient but coconut oil is just a healthier alternative. If your someone who prefers using butter, go ahead and add the same quantity of melted unsalted butter instead of coconut oil

Recipe – Healthy Almond Flour Cookies
Ingredients
Almond flour 140 grams
Coconut sugar 35 grams
Cinnamon powder 1/4 teaspoon
Dried ginger powder 1/2 teaspoon
Nutmeg, grated 1/4 teaspoon
Pinch of salt
Baking Soda 1/4 teaspoon
Coconut oil 3 tablespoons
Honey or maple syrup 2 tablespoons
Vanilla essence 1/2 teaspoon
Flaxseeds powder 1 tablespoon
Warm water 3 tablespoons
Instructions
Firstly, combine the flax seed powder and warm water together. Mix well and let it sit for 5 to 10 minutes before using
In a bowl combine the almond flour, coconut sugar, cinnamon powder, ginger powder, grated nutmeg, salt, and baking soda. Mix well and set aside
In another bowl, combine the wet ingredients – The prepared flax seed mixture, coconut oil, vanilla essence and, honey. Whisk well and pour this into the almond flour mixture
Bring it all together using a spatula. It should form a smooth dough
Cling wrap and let it sit in the refrigerator for 30 minutes. Once chilled, scoop out medium-sized dough balls using an ice cream scooper.
Make a smooth cookie dough ball and place it on a baking tray lined with parchment paper (make sure the cookies are not too close to each other as they spread during the baking process)
Slightly press each cookie ball with the palm of your hands to flatten it
Bake at 180 degrees C for 15 to 20 minutes or until golden brown
NOTES
Bake the cookies in the middle rack of the oven
Do not bake it for too long as they would tend to become hard once out of the oven if overbaked
You can even use maple syrup instead of honey

I never really understood what recipes meant when they said to use a flax seed egg. Thanks for explaining. Can you use flax seed eggs in all recipes as a substitute for egg or just some?

Flaxseed eggs work well for most cookies, brownies and muffin recipes. Basically, batters that are heavier in texture go well with flax eggs. Of course, you can’t make a chiffon cake or angel food cake with this method, but even other thinner cake batters do not go well with flaxseed eggs, you’ll have to look out for other substitutes for it
