What is Rasmalai ?

Rasmalai is a mithai, that’s an Indian sweet and is popularly called Rasmalai in Hindi and Rossomalai in Bengali.

It is made using cottage cheese that’s prepared by curdling milk and separating the cheese from the liquid. These balls of cottage cheese are then soaked and served in a thick rich sweetened milk that makes the dessert complete

Rasmalai can be prepared at home from scratch and can also be purchased readymade from any Indian Sweet mart or store selling Indian sweets to make this Rasmalai Cake Recipe

For this recipe I will be using store brought rasmalai but feel free to make it at home as well

What is a Rasmalai Cake ?

A mere combination of a simple Vanilla Cake Sponge soaked in Rasmalai milk, topped with whipped cream that’s beaten with rasmalai chunks. The cake is then decorated with chopped rasmalai pieces on it

How to make a Ras malai cake ?

Step 1

Follow my soft and delicious Eggless Vanilla Cake Recipe to make a good vanilla sponge for this Rasmalai Cake Recipe. Buy a big box of Ras malai or make some at home

Step 2

Beat whipping cream with chunks of rasmalai in it

Step 3

Cut layers of the vanilla cake and soak each layer in the milk gravy that comes along with the rasmalai pieces

Step 4

Layer the cake layers with the whipping cream and chopped pieces of rasmalai

Step 5

Cover the cake with this whipped cream on all sides

Step 6

Prepare a white chocolate drip using rasmalai milk and white chocolate. Pour the drip over the cake and decorate using chopped rasmalai and chopped pista pieces

This Rasmalai cake is a combination of vanilla cake sponge soaked in rasmalai milk and topped with cream flavored with rasmalai and decorated with big chunks of this delicious Indian sweet

Ingredients

For the whipping cream

  • 250 ml whipping cream
  • 2 tbsps rasmalai milk
  • 1 to 2 rasmalai's, big size
  • 2 drops yellow food color

For the rasmalai drip

  • 2 to 3 tsps rasmalai milk
  • 40 grams finely chopped white chocolate
  • 1 drop yellow food color

For layering the cake

  • 4 rasmalai's, roughly chopped
  • ½ cup rasmalai milk 120 ml

For cake decorating

  • 8 – 10 pista's, roughly sliced
  • 4 rasmalai's, roughly chopped

Instructions

For the whipping cream mixture

  • Combine the cold whipped cream with the rasmalai milk and beat until soft peaks form
  • Add the rasmalai and yellow food color to it and beat to semi-stiff peaks

To prepare the cake

  • Cut 3 layers of the vanilla cake and place one layer of this cake on a cake board. Soak this cake sponge in the rasmalai milk using a spoon. Add 2 to 3 spoons of the beaten cream and smoothen it using a palette knife. Add pieces of ras malai and place another cake layer over it
  • Do the same with the remaining 2 cake layers and cover the whole cake with whipping cream. Sprinkle some sliced pista's on the sides of the cake

For the Rasmalai drip

  • Combine the chopped white chocolate with the rasmalai milk. Microwave for 30 seconds to 1 minute or place on a double boiler. Mix well until the chocolate has melted. Add a drop of yellow color and mix
  • Pour this mixture in a piping bag and drip on the border of the cake. Pour the remaining on the top of the cake and smoothen it using a palette knife

For decorating the cake

  • Pipe the bottom of the cake with whipping cream using a star nozzle fitted in a nozzle bag. Pipe the top border of the cake with rosettes using more whipping cream in a nozzle bag fitted with a rosette nozzle. Place chunks of chopped rasmalai pieces and sprinkle some more pista slices on the top
