What is Malai Kulfi?
Have you eaten an Indian Kulfi ?? It is a milk-based icecream on a stick, somtimes with nuts and fruits added too. Its known to be creamy and rich in flavor, and also thicker than regular icecream. The most delicious among all the kulfi’s is the malai kulfi which is a combination of thickened milk and sugar.
Malai means cream, and the reason this icecream is called malai icecream or malai kulfi is because it is made by thickening the milk into cream. So, in every bite you get bits and pieces of cream which makes the icecream even more delicious and rich
Malai Kulfi icecream without condensed milk
Homemade icecream contain condensed milk which adds richness and thickens the icecream too. Kulfi is made from milk that is thickened using sugar, which is similar to what condensed milk is. So, to make this Kulfi recipe we do not need additional condensed milk or any other thickening agent
Traditional Malai Kulfi Recipe
Traditionally, malai kulfi was made using a combination of only milk and sugar. However, nowadays, there are recipes which have many other ingredients like milk powder, cornstarch, etc added to it. Adding these ingredients makes the process of kulfi making faster as it thickens the milk easily
In this post, we are making the traditional and easy 2 ingredients kulfi recipe. Thus, it takes a little longer as the milk needs to thicken on medium heat while is forms a layer of cream on the top. This process is time consuming but the end result is an authentic and delicious kulfi

Ingredients to make kulfi icecream
Milk
It’s best to use full-fat buffalo milk to make kulfi. Buffalo milk is higher in fat content and does make the icecream thicker and richer in taste. If the quality of milk is skimmed or low-fat there wouldn’t be any malai forming while you make the kulfi. So please use excellent milk
Sugar
Use regular granulated sugar to make this Malai Kulfi. Play around with the quantity of sugar as per sweetness
How to make homemade Kulfi?
Put some milk on the gas and keep stirring it every 2 to 3 minutes. The layer of cream that forms over the milk needs to be mixed back into the milk. So, you keep forming the cream on top while the milk is on medium heat and then, stir the cream back into the milk once a layer of it is formed
Do this, until the milk reduces to half its quantity
Add the sugar as per sweetness and pour in kulfi moulds. Set to freeze for a couple hours and serve as required

Ingredients
- 1 litre milk full-fat
- ¼ cup granulated sugar use as per sweetness
Instructions
- In a pan, add the milk and cook on medium heat stirring occasionally
- Everytime you notice a layer of cream forming on the top of the milk, use a spatula and keep picking the cream and placing it at the sides of the pan. Continue stirring the milk every 2 to 3 mins. Once the cream forms, again, do the same thing, place the layer of cream at the side of the pan. Do this till the milk reduces to half the quantity. Mix the cream well into the milk. You should now have a grainy and thick milk mixture
- Next, add the sugar and stir till it dissolves. Switch off the gas, and let this mixture come to room temperature
- Pour the mixture into a kulfi mould or icecream mould. Let it freeze for 4 to 5 hours or until set completely
To demould
- Place the kulfi mould in a bowl of water for about 30 seconds. This will loosen the sides of the icecream and make it easier to demould the kulfi
- Garnish the malai kulfi with nuts of choice and serve immediately
