First of all, this Rainbow Bread is soft & fluffy on the inside with a crisp texture on the outside
Also, contains milk powder which makes the rainbow bread even tasty
Secondly, it’s not loaded with food coloring but colored with natural vegetable purees
Also, it’s an easy to make natural coloured bread and perfect for a rainbow feel

Homemade Rainbow Bread
So, I came across so many bread recipes which looked very pretty with colors popping up. However, one thing that got me uncomfortable was the use of edible food coloring gels in the bread dough. Not like I don’t use edible colors however, I like avoiding them as much as possible.
This couldn’t stop me from making this bread so I decided to play colorful using natural colors popping out from vegetable purees. They didn’t only enhance the taste of the bread to a certain extent, however, also gave it a natural color which looked extremely beautiful
How To Color Bread Dough ??
To make these natural colors I used the following
Yellow – Turmeric powder & milk (Thick paste)
Orange – Paprika powder & milk (Thick paste)
Green – Spinach puree
Purple – Purple cabbage puree
Dark Pink – Beetroot puree
Blue – A drop of blue food coloring (the only edible color I used in the whole recipe)

HOW TO MAKE THESE NATURAL COLORS FOR RAINBOW BREAD
Note, all of the below colors should be made into a thick paste and then combined with portions of the dough to make the rainbow milk bread
Yellow
Firstly, make a thick paste using some milk and turmeric. Then, add this to the dough as per how dark you would like it to be. The consistency of the paste should feel like toothpaste
Orange
Make a thick paste using some milk and paprika powder. Then, add this to the dough as per how dark you would like it to be for the rainbow milk bread. The consistency of the paste should feel like toothpaste
Green
Boil 25-30 spinach leaves for 2 mins. Then, strain the water and grind in the mixer forming a thick paste. Do not overcook the spinach before grinding or else it may loose its color and yield a dull rainbow bread
Purple
Boil 50-80 grams of purple cabbage leaves for 2 mins. Then, strain & grind into a thick paste and use as required
Dark Pink
Make a paste of boiled beetroot in the grinder and use as required. Make sure the beetroot is well boiled and not hard, this will ensure a brighter color to the natural coloured bread
Blue
In conclusion, there are various ways of making blue color naturally for rainbow milk bread. Some people combine the purple cabbage paste with baking soda and then add it to the dough saying this gives it a blue tinge. However, some add organic butterfly pea flower powder to the dough which yields a natural blue color. Note, it’s not easily available in India but can be found online. However, I stuck onto using a drop of blue food coloring to make the blue color dough for the rainbow bread

Rainbow Milk Bread – With Natural Colors Recipe
Ingredients
All-purpose flour 2 ½ cups (320 grams)
Granulated sugar 4 tablespoons (50 grams)
Milk powder ¼ cup (30 grams)
Instant yeast 1 ½ teaspoon
Full-fat milk 1 ¼ cup (320 ml), warm
Salted butter 2 heaped tablespoons (30 grams), room temperature
Paste & vegetable purees as mentioned above, use as required
Instructions – Natural Coloured Bread
Part 1 – Rainbow Milk Bread
In a small bowl, add the warm milk, sugar, and yeast. Mix and set aside for 5 mins
In a bigger bowl, combine the flour and milk powder.
After 5 mins you will notice the yeast mixture turns foamy. Add this to the flour & milk powder mixture. Mix well and form a dough. Let the dough rest for an hour or until its double in quantity
Part 2
Once the dough is double in size, add the butter and start kneading the dough until it turns soft and smooth. This takes about 5 to 7 mins. Cling wrap the bowl and rest this dough for 30 mins
Once 30 mins are up, divide this dough into 6 parts and add the 6 natural paste and purees (colors) to each part of the dough. Knead well. Use the vegetable purees only as required. If the dough turns too sticky add a little flour to it while kneading.
Roll each dough color (6 colors) into logs to form a plait shaped pattern. You can form any shape you would like the bread to be in. I braided the bread. Just a random braid with no special skills involved
Part 3 – Baking the Rainbow Coloured Bread
Place this braided bread onto a baking tray dusted with flour. Let it rest for 40 mins, it should double in size.
Brush the braided bread with milk and bake in a preheated oven at 170 degrees for 45-55 mins. The bread should feel firm when tapped and the base should be golden crisp brown
Brush with melted butter once out of the oven (optional)
