KNEADING THE DOUGH
So, the initial steps are combining the yeast mixture with the flour mixture. Initially, the dough is sticky but kneading it well will turn this sticky dough into a smooth one. In other words, use your palms and knead the dough on a granite surface for best results
PROOFING FOR SUPER SOFT BASIC BREAD
Proving the dough is another essential step in bread making. I proof the dough after mixing the basic ingredients for 40 mins, beat the dough back and knead it again into a smooth ball and reproof it for 30 mins and finally knead it into a smooth log shape dough, place it in the loaf tin dusted with flour and proof it for 30 mins or until double in size. Bake once done
BAKING
Bread should be baked at 180 degrees C for 30 – 40 mins. The top should be a dark golden brown and should feel firm when tapped (sound hollow when tapped) An inserted skewer should come out clean. Once the bread is baked, remove it out of the oven and brush on some melted butter onto it

Ingredients
- all-purpose flour 2 1/2 cups (300 grams)
- milk powder 3 tablespoons (30 grams)
- salt 1/2 teaspoon (2 grams)
- warm water 1/2 cup + 1/2 cup (120 ml + 120 ml)
- instant dry yeast 1 1/2 teaspoon (5 grams)
- sugar 3 tablespoons (40 grams)
- milk 1 tablespoon (15 grams)
- butter 2 tablespoon + 1 tablespoons, room temperature (30 grams + 15 grams)
- Oil for greasing the bowl
Instructions FOR SUPER SOFT BASIC BREAD
- In a bowl, combine the sugar and 1/2 cup (120 ml) warm water. Add the yeast, stir and set aside for 5-6 mins. This mixture should turn frothy.
- In another bowl, add the all-purpose flour, milk powder, and salt. Mix well. Make a well in the center and add the frothy yeast mixture to it. Using a spoon mix all of it together. Add the remaining 1/2 cup (120 ml) water a little at a time. Mix well. Add water only as required. The dough should turn slightly sticky (not too sticky)
- Knead well for 7-8 mins and place this dough in a bowl greased with oil, cling wrap the bowl. Proof the dough for 40 mins or until double in size. Once done, punch the dough back, add 2 tablespoons (30 grams) of butter and knead it for 7-8 mins again. Proof for 30 mins and re-punch the dough.
- Once done, bring the dough onto a surface dusted with flour and form a smooth log shape according to the size of the baking loaf dish (I used a 7-inch rectangular loaf tin). Place the dough in it and let it double in size, should take about 30-40 mins
- In a small bowl, combine the milk and 1 tablespoon of melted butter. Brush it onto the top of the loaf
- Bake in a preheated oven at 180 degrees C for 30-40 mins until the top turns dark golden brown and feels firm
- Remove from the oven and brush on some more butter and milk onto it. There you have a Soft Basic Bread

You could use half wheat flour and half all purpose flour for this recipe. I wouldn’t recommend using only wheat flour as the bread then turns dense and heavy. Will soon share my brown bread recipe. Stay tuned !!

Yes !! You can use active yeast instead of instant yeast. However, you need to add 2 teaspoons of active yeast instead of 1 1/2 teaspoon of instant yeast

I added everything all at once to my kitchen-aid stand mixer including the cup of water. Mixed with dough hook and then machine kneaded and followed directions from there. Just came out of the of the oven and it is half gone already. I cut it very hot with a very sharp bread knife. I used a parchment paper cradle to bake and remove easily from the bread pan. The crumb is beautiful and tasty. Not too sweet for me although some other comments said it might be. I think it is the perfect soft white sandwich bread recipe. No sandwiches here…just butter today. I’ll probably make another loaf or two tomorrow. I will double the recipe.
