Ingredients to make Almond Yogurt Cake
Yogurt
Greek Yogurt is the best to use. However, feel free to use any yogurt that’s easily available. We look out for a creamy and thick yogurt which eventually yields a healthier cake
Almond flour
Look out for blanched almond flour or almond meal (that’s without the almond skin) Any good brand will do the job
Sugar
Regular fine sugar is best to use. I use castor sugar as it is super fine. Cane sugar or other vegan sugar substitues could also be used

Eggs
Eggs is the binding ingredient in this cake. Eggs give this cake a good texture making is soft and fluffy
Baking soda
Adding baking soda to any acidic ingredient yields a softer and fluffier cake. Yogurt and baking soda when combined and set aside for a few minutes becomes frothy. Doing this helps with the texture of the cake
Butter
Salted butter is best to use. Melt the butter before using. You may also use coconut oil or any unflavored oil of your choice instead of butter
Baking powder
Needs to be combined with the almond flour before adding it to the cake. And is an essential ingredient to make the cake fluffy
How to make a cake with almond flour (Almond Yogurt Cake)
Step 1
Combine the sugar, yogurt and vanilla essence. Whisk well and add the baking soda to this mixture and set aside. After about 2 to 5 minutes the mixture should turn frothy
Step 2
Add the melted butter and eggs. Whisk well and lastly, add the almond flour and baking powder. Mix well
Step 3
Pour this batter into a 6-inch baking dish lined with parchment paper. Garnish with almond flakes and bake at 180 degrees C for 45 to 50 mins or until an inserted skewer comes out clean

Almond Yogurt Cake – Recipe Card
Ingredients
- 100 grams fine sugar 1/2 cup
- 210 grams greek yogurt 3/4 cup
- 1 tsp vanilla essence 5 ml
- ½ tsp baking soda
- 3 eggs
- 80 grams salted butter, melted 1/3 cup
- 190 grams almond flour 2 cups
- 1 ½ tsp baking powder
- 12-15 almond flakes, for garnishing
Instructions
- In a bowl, add the castor sugar, room temperature yogurt and vanilla essence. Mix well until the sugar has dissolved a little. To this mixture, add the baking soda and whisk well. Keep this mixture aside for 2 to 5 mins. It should become frothy
- Next, add the eggs and melted butter and whisk
- Lastly add the almond flour and baking powder to the mixture. Form a smooth lump-free batter and pour in a 6-inch baking dish lined with parchment paper. Sprinkle a few almond flakes on the top. Tap the dish and bake this cake for 40 to 50 mins at 180 degrees C (350 degrees F) or until an inserted skewer comes out clean

I find that this sinks terribly in the middle, what might be wrong?
It could be the oven heating, if the temperature is not right (lower than needed) the cake sinks in the center
