How to make the best chocolate dessert at home?

This one bowl chocolate cake with hot fudge sauce is too easy

All you need is just a few ingredients, combine them all in a bowl and bake

This recipe has 3 parts to it

Firstly, making of the cake batter and pouring this batter in a baking dish

Secondly, making a mixture of sugar & cocoa powder that needs to be sprinkled over the cake

And lastly, topping all this up with hot water & coffee powder. This is it !!

Note – This cake does not require any chocolate ganache or separate chocolate sauce to be made and added. That’s why we say its a hassle free recipe

Ingredients to make Chocolate Lava Fudge Cake

For the Chocolate cake

All purpose flour

Regular flour also known as Maida in India (Hindi), is required to make this cake. No fancy flours like cake flour, self raising or any other kind is required

Cocoa powder

Cocoa powder is one of the most important ingredient in this cake as it has no other kind of chocolate added to it. Use good quality cocoa powder that is dark and sieved before using

Baking powder

Baking powder is important. It’s the reason why this cake rises. Make sure to add fresh baking powder and mix it well with the flour mixture before using

Castor Sugar

I use castor sugar but you may use regular granulated sugar too. Just make sure it’s fine and of good quality. The sugar we get in India is thick and thus I stress on using castor sugar instead of regular granulated sugar

Milk

Use full-fat room temperature milk

Butter

Salted butter is always first preference. Melted butter helps to maintain a better cake texture so melt the butter before using. If using unsalted butter, add a pinch of salt to it

Vanilla essence

Not a compulsion but it leaves a beautiful essence to this cake. And also covers the whiff of eggs if adding any. If using vanilla extract instead of essence, add a little less as its strong

Egg

Adding an egg to this recipe, makes the cake tastier and fluffier in texture. But its no compulsion. You may skip the egg completely if required

For the chocolate fudge sauce

Cocoa powder

Good quality cocoa powder is a must. Using dark cocoa powder helps in a better color and richer taste

Brown sugar or Demerara sugar

Brown sugar is sometimes thick and sometimes fine. If the brown sugar or Demerara sugar is available in its thick form then I recommend you grind it before using it. If the sugar is fine, then use it as required

Castor sugar

Castor sugar or regular granulated sugar that is ground fine can also be used. A combination of castor and brown sugar gives a good taste and balances the sweetness well

Hot water & Instant coffee powder

Hot water means boiling hot water and not warm or room temperature water. This is what makes the sauce texture right. So, boil the water and add instant coffee powder to it for flavor. You may skip the coffee if not a fan

How to make chocolate lava cakes – Process

Step 1

Combine the dry ingredients like flour, cocoa powder, baking powder, sugar and mix well

Step 2

Now, add the wet ingredients like milk, butter, vanilla essence and egg. Beat all of it well and pour the batter in a greased dish

Step 3

Combine the chocolate fudge mix together – Cocoa powder, brown sugar & Castor sugar. Sprinkle this mixture all over the cake

Step 4

Pour boiling hot water that’s mixed with coffee over the mixture and immediately bake it in the oven. Enjoy once done !!

Ingredients

For the cake batter

  • 120 grams all purpose flour 1 cup
  • 100 grams castor sugar or fine granulated sugar 1/2 cup
  • 25 grams cocoa powder 1/4 cup
  • 60 grams melted salted butter 1/4 cup
  • 1 teaspoon vanilla essence 5 ml
  • 130 ml milk, room temperature 1/2 cup
  • 1 full egg
  • 1 teaspoon baking powder

For the hot fudge mixture

  • 20 grams cocoa powder 3 tablespoons
  • 100 grams castor sugar 1/2 cup
  • 100 grams brown sugar 1/2 cup
  • 290 ml boiling hot water 1 & 1/4 cup
  • 1 teaspoon instant coffee powder

Instructions

For the cake batter

  • In a bowl combine the all purpose flour, cocoa powder, baking powder and 1/2 cup of castor sugar. Mix these dry ingredients really well
  • Add milk, melted butter, vanilla essence and egg to the dry ingredients and continue whisking
  • Pour this batter into a greased baking dish. I used an 8 inch glass baking dish. Spread it well all around the dish

For the fudge mixture

  • In a small bowl, combine the cocoa powder, remaining 1/2 cup castor sugar and brown sugar. Mix well and sprinkle this powder all over the cake batter
  • Take the boiling hot water, add the coffee powder and stir well. Pour this over the cake batter and fudge mixture. Make sure its all over the cake and bake immediately at 160 degrees C for 35 to 40 mins or until the center of this cake feels wobbly but firm
  • Serve hot immediately once out of the oven. Taste best when served with vanilla icecream

Recipe Notes

The brown sugar I had was really thick, I ground it before using it
Dust the cake with icing sugar if you’d like that
