Ingredients to make Carrot Cake Energy Bites

Carrots

Fresh carrots are best to use. I like to use the tender reddish carrots and not the bright orange hard one’s. However, feel free to use whats easily available. Chop the carrots roughly before using

Coconut

Freshly grated coconut adds a delicious flavor and moisture to these energy balls. It makes it moist and not dry. Do not substitute freshly grated coconut with desiccated coconut, this will turn the energy balls dry. You might as well skip the coconut if your not a fan of it

Walnuts

Walnuts in a carrot cake is a match made in heaven. Use walnuts to add some more flavor to this recipe. I’ve ground the walnuts along with the other ingredients however you may even chop them fine instead of grinding it. This will add a crunch to the energy balls

Almond flour

Almond flour is what binds all the ingredients together to form balls. An essential ingredient not just for flavor but also texture

Spice powder

Spice powder adds a hint of spice. You may add whichever spice you like. I’ve given you the recipe of the spice powder below but feel free to use whats easily available in your kitchen

Coconut Oil

Cold pressed pure coconut oil is loved. And just a bit of it helps with the moist texture of these energy balls

Dates

There is no sugar added to this recipe. However, the sugar substitute in this one is dates. It’s best to use black soft seedless dates. Their not just naturally sweet but also have a beautiful soft texture which blends easily with the other ingredients

Desiccated Coconut flakes for rolling

These are strands of dry coconut that is used for rolling. It looks beautiful when rolled in coconut. Feel free to roll the balls in chocolate, roasted seeds, sesame, etc if your not a coconut fan

How to make Carrot Cake Energy Balls

It’s a very easy recipe with just a few steps

Step 1 – Add all the ingredients in a mixer grinder besides the desiccated coconut flakes and almond flour. Grind well until it forms a fine paste

Step 2 – Remove the mixture into a bowl and combine it with almond flour. You may add more almond flour if the dough is not good enough to form balls

Step 3 – Form the energy balls and roll them in coconut flakes. Serve or simply store them at room temperature for 2 days and in the fridge for 10 days

These easy Carrot Cake Energy Balls are made with carrots, almond flour, walnuts, etc and is the perfect healthy snack recipe to try

Ingredients

  • 130 grams Carrot, roughly chopped 1 big carrot, 1 cup
  • 110 grams Black seedless soft dates 1/2 cup
  • 30 grams Walnuts 1/4 cup
  • 1 tbsp coconut oil 15 ml
  • 25 grams freshly grated coconut 1/4 cup
  • ¼ tsp Spice powder (mix of cardamom & cinnamon powder)
  • Pinch of salt
  • ½ tsp vanilla essence 2.5 ml
  • 150 grams almond flour 1 1/2 cup
  • 25 grams desiccated coconut flakes for rolling 1/4 cup

Instructions

  • In a mixer grinder, combine all the ingredients besides the almond flour and desiccated coconut flakes. Grind the mixture and remove it in a bowl
  • To the carrot mixture, add the almond flour and mix to form a dough. You may add a little more almond flour if needed
  • Form balls and roll it in the coconut flakes. Serve or store for 2 days at room temperature and for 10 days in the fridge

Recipe Notes

If you like a little crunch, add the walnuts along with the almond flour while forming the dough instead of grinding it with the carrots
