This easy pancake recipe for kids are a go-to snack that is loved by them and super quick to make as well. There are so many recipes over the internet on how to make pancakes, I’ve tried so many recipes and finally discovered a favorite with changes done by me as per taste and consistency

Old-fashioned pancakes also known as English pancakes is a flat cake thats made from a batter containing eggs, milk, sugar, flour, etc. Pancakes are popularly served with fruits, butter and honey and are loved by kids around the globe

Ingredients to make Fluffy Pancakes
All Purpose flour
Pancakes are meant to be fluffy and light and to acquire this texture, all purpose flour is the best. There are recipes which use whole wheat flour for a healthier outlook however, using whole wheat flour makes the pancakes dense and not as fluffy as the one’s made with all purpose flour
Baking powder & Baking soda
Both of these are responsible for the light and airry texture of these pancakes. Baking powder is a leavening agent and Baking soda combines with the acidic ingredients like buttermilk in this recipe to help the pancakes to acquire the beautiful texture it has. So no skipping these
Eggs
We’re using lesser egg yolks and more of beaten egg whites to make the pancake batter lighter in texture. Eggs are essential to acquire a fluffy texture. Use room temperature eggs and beat the egg whites well before adding it to the batter
Sugar
Super fine sugar dissolves faster in the egg whites when beaten. Feel free to add more or less sugar as per taste. Remember, pancakes are even topped with honey for some sweetness after frying them

Butter
Using salted butter balances flavors in the batter. If using unsalted butter, add a pinch of salt along. Butter makes all things delicious, so you now know why we’re adding them to our pancakes as well
Vanilla Essence
Covers the whiff from the eggs. A little bit does it job !!
Buttermilk (Recipe here below)
Make your own buttermilk at home by combining 150 ml warm milk with 1/2 tsp white vinegar. Mix well and set a side for 5 to 10 mins before combining with the other ingredients to make the pancake batter
Cream of tartar (optional ingredient)
Cream of tartar is a acid salt that is combined with egg whites while beating it. This helps in stabilizing egg whites when beaten. If you do not have this ingredient, you may skip it. But adding cream of tartar thus yields fluffier pancakes. Do not go overboard with adding this ingredients as it is salty

Steps to make fluffy Pancakes at home
Step 1
Beat the egg whites with cream of tartar and sugar until stiff. Set aside
Step 2
In another bowl, combine the wet ingredients together – Egg yolk, melted butter, vanilla essence and buttermilk. Whisk well and add the flour, baking powder and baking soda to this mixture. Whisk well making sure there are no lumps
Step 3
Combine the egg whites mixture with the flour mixture. Do not be rough at this stage as you do not want the egg whites to loose it fluffy texture
Step 4 (form the pancakes)
In a pan, brush some butter and pour a spoonfull of batter in the center. Cover with a lid and let this cook for 3 to 4 mins, one side of the pancake should be golden brown. Flip the pancake and cook of the other side as well. Serve the pancakes with fresh fruits, butter and lots of honey OR maple syrup over it

Recipe Card – Fluffy Pancakes
Ingredients
- 120 grams All purpose flour 1 cup
- ¼ tsp Baking soda
- ½ tsp Baking powder
- 1 Egg yolk
- 3 Egg whites
- 60 grams Fine sugar 1/4 cup
- Pinch of cream of tartar (optional) 1/8 tsp
- 30 ml melted salted butter 2 tbsps
- 150 ml Buttermilk 1/2 cup + 4 tbsp
- ½ tsp vanilla essence
Instructions
- In a bowl, add the melted butter, egg yolk, buttermilk and vanilla essence. Whisk well and add the flour, baking powder and baking soda. Mix all of it well making sure there are no lumps. Set aside
- In another bowl, whisk the egg whites along with the cream of tartar and fine sugar. Whisk until still peaks
- Combine both the mixtures together by mixing the egg whites carefully with the flour mixture using a whisk
To make the pancakes
- In a pan, on slow to medium heat, brush some butter and pour a big dollop of pancake butter. Cover with a lid for 3 to 4 mins. Once there are bubbles forming on the top and the pancake looks golden brown on one side, flip it over and let it cook for a few minutes on the other side as well
- Follow the same process for the remaining pancake batter and serve these with fresh fruits, butter and lots of honey or maple syrup
