So, I’m a total Pina Colada Fan. Moreover, it’s one of the things I really really love.  Also, I believe pineapple & coconut is the best combo. To keep up with its goodness here’s sharing my all-time favorite Pina Colada Chia Seeds Pudding recipe. Chia seeds are packed with so much goodness and are extremely good for health. Chia seeds have more calcium than milk and are loaded with antioxidants & omega-3

To get started lets first talk about ingredients

Chia Seeds Pudding

Chia Seeds: So, we all know chia seeds are full of nutrients. Thus, for this recipe, you can feel free to use white or black chia seeds. 

Coconut: Now, we also need some coconut cream to soak are chia seeds in it. The reason I use coconut cream and not coconut milk is because the cream is thicker and more flavorful. It gives the pudding a creamy texture with a load coconutty flavors. In case you do not get coconut cream you can use coconut milk. However, coconut cream is my first preference. 

Pineapple: For this recipe, I’m using chopped canned pineapple. I used canned pineapple since its always available. It also has a good balance of sweet & sour since canned pineapples come soaked in sugar syrup.  You can also use fresh pineapple, in fact even better. The creamy chia seeds go well with the sour pineapple base

How To Make Chia Pudding Recipe With Coconut & Pineapple

So, I believe pineapple & coconut is one of the best combo’s. To keep up with its goodness here’s sharing my all-time favorite Pina Colada Chia Seeds Pudding recipe.

Chia Seeds Pudding

Ingredients

  • 1/4 cup (40 grams) chia seeds
  • 1 1/4 cup (320 ml) coconut cream
  • 3-4 tablespoons honey
  • 1 1/2 cup chopped pineapple
  • fresh shredded coconut (for garnishing)

Instructions

  • In a bowl, put the coconut cream & chia seeds, give this a good mix. Add the honey as required and refrigerate for 10 minutes (not longer)
  • In a glass, put the chopped pineapple at the base. Pour the refrigerated chia seeds mixture over the pineapple base. Refrigerate for an hour
  • Garnish with some chopped pineapple & shredded coconut

Ingredients

  • ¼ cup  chia seeds 40 grams
  • 1 ¼ cup coconut cream 320 ml
  • 3-4 tbsp honey
  • 1 ½ cup chopped pineapple
  • fresh shredded coconut (for garnishing)

  • In a bowl, put the coconut cream & chia seeds, give this a good mix. Add the honey as required and refrigerate for 10 minutes (not longer)
  • In a glass, put the chopped pineapple at the base. Pour the refrigerated chia seeds mixture over the pineapple base. Refrigerate for an hour
  • Garnish with some chopped pineapple & shredded coconut

Recipe Notes

The reason we refrigerate the chia seeds & coconut cream mixture for 10 mins is to let the chia seeds bloom a bit before pouring it over the pineapple. If we skip this step, the watery mixture will cover the pineapple making the pineapple invisible
