Super Soft Basic Bread
This bread recipe is basic, to the point, and is absolutely delicious. Whenever I bake this bread my mother thinks I’m one amazing baker as it turns out better than the readymade ones. So fresh and fluffy, the texture is beautiful
Baking bread is all about kneading the dough well and baking it at the right temperature. Bread making is super easy if all steps are followed accordingly

Simple Homemade Bread Recipe
KNEADING THE DOUGH
So, the initial steps are combining the yeast mixture with the flour mixture. Initially, the dough is sticky but kneading it well will turn this sticky dough into a smooth one. In other words, use your palms and knead the dough on a granite surface for best results
PROOFING FOR SUPER SOFT BASIC BREAD
Proving the dough is another essential step in bread making. I proof the dough after mixing the basic ingredients for 40 mins, beat the dough back and knead it again into a smooth ball and reproof it for 30 mins and finally knead it into a smooth log shape dough, place it in the loaf tin dusted with flour and proof it for 30 mins or until double in size. Bake once done
BAKING
Bread should be baked at 180 degrees C for 30 – 40 mins. The top should be a dark golden brown and should feel firm when tapped (sound hollow when tapped) An inserted skewer should come out clean. Once the bread is baked, remove it out of the oven and brush some melted butter onto it

Instructions
- In a bowl, combine the sugar and 1/2 cup (120 ml) warm water. Add the yeast, stir and set aside for 5-6 mins. This mixture should turn frothy.
- In another bowl, add the all-purpose flour, milk powder, and salt. Mix well. Make a well in the center and add the frothy yeast mixture to it. Using a spoon mix all of it together. Add the remaining 1/2 cup (120 ml) water a little at a time. Mix well. Add water only as required. The dough should turn slightly sticky (not too sticky)
- Knead well for 7-8 mins and place this dough in a bowl greased with oil, cling wrap the bowl. Proof the dough for 40 mins or until double in size. Once done, punch the dough back, add 2 tablespoons (30 grams) of butter and knead it for 7-8 mins again. Proof for 30 mins and re-punch the dough.
- Once done, bring the dough onto a surface dusted with flour and form a smooth log shape according to the size of the baking loaf dish (I used a 7-inch rectangular loaf tin). Place the dough in it and let it double in size, should take about 30-40 mins
- In a small bowl, combine the milk and 1 tablespoon of melted butter. Brush it onto the top of the loaf
- Bake in a preheated oven at 180 degrees C for 30-40 mins until the top turns dark golden brown and feels firm
- Remove from the oven and brush on some more butter and milk onto it. There you have a Soft Basic Bread

- milk 1 tablespoon 15 grams
- butter 2 tablespoon + 1 tablespoons room temperature (30 grams + 15 grams)

Have you ever used honey instead of sugar? I used it on another bread recipe and it was really good. If so would it be the same amount?

I just tried to make this, I checked the bread after 30 minutes to see how done it was. It looked great, but not brown, so I closed the door and checked again 10 minutes later. It had sunk! And still had no color.
Is it correct to set the oven to just 180 degrees? I thinking maybe it was supposed to read 380 degrees..
Please let me know, I want to try again, but I question the baking temperature.

This is one of my go-to recipes and never fails cos its too easy and delicious.
I’m guessing in your case its the oven that created an issue. Firstly, the oven heating may have not been right or the mode that you baked it at may have been wrong.
Secondly, it is 180 degrees C (C stands for celcius) So, my question to you is, did you bake it at 180 degrees C or 180 degrees F (fahrenheit) ? If baked at F, that must be a problem
Bake at 375 Fahrenheit for 30 minutes. It’s a bit higher than 180C but it baked and browned nicely.

There’s no need to grease or spray the loaf pan. And I let the bread cool in the pan for a while once baked before removing it

I’m trying your recipe the second time today. It is so worth it. I didn’t have milk powder so what I did was i used 120ml of water to mix sugar and yeast so I used my liquid milk as required as the remaining 120ml water. The first bread i made, i used about 30ml of water and the bread came out fine but was too salty. So this time around, i reduced d salt slightly.
I tried to use 60ml liquid milk today but was a bit mushy, so i added a very little flour to make it to desired texture. I hope it comes out great.

I tried this recipe today without milk powder and I used 9 inch bread loaf. The thing is I dint find the bread sweet and it is dense.
The measurements I used-
Maida-384 g
Warm water-154+154
Instant dry yeast-1 1/2 +I pinch
Sugar-48 g
Milk-17 g
Butter-38 g
So can you say what is wrong with this?
I see that you’ve tweeked all the quantities of the ingredients which will definitely yield a different texture. Also, adding milk powder to this recipe is essential. Please follow the recipe with exact measurements for best results

My bread maker has disappointed me the last few times so I googled a soft, fluffy bread and this popped up. Made it today!…This is THE best loaf of bread I have EVER made! It is definitely light, soft, and good for sandwiches! Texture is as good as store-bought bread but much tastier and no preservatives! I was hoping you would include variations with different flours and herbs. I will be experiementing with that.
Your recipe called for adding butter during the second kneading. I thought, “here we go! Another recipe on the internet that was written incorrectly!”. As I started kneading in the butter, it was weird and squishy but, about half way through, it all incorporated and came together nicely!
This will be my go-to bread from now on!

I added everything all at once to my kitchen-aid stand mixer including the cup of water. Mixed with dough hook and then machine kneaded and followed directions from there. Just came out of the of the oven and it is half gone already. I cut it very hot with a very sharp bread knife. I used a parchment paper cradle to bake and remove easily from the bread pan. The crumb is beautiful and tasty. Not too sweet for me although some other comments said it might be. I think it is the perfect soft white sandwich bread recipe. No sandwiches here…just butter today. I’ll probably make another loaf or two tomorrow. I will double the recipe.

Yes !! You can use active yeast instead of instant yeast. However, you need to add 2 teaspoons of active yeast instead of 1 1/2 teaspoon of instant yeast

You could use half wheat flour and half all purpose flour for this recipe. I wouldn’t recommend using only wheat flour as the bread then turns dense and heavy. Will soon share my brown bread recipe. Stay tuned !!
